Kirk: From disability to dynamo


Robin shared her husband’s life-altering Wheat Belly experience:


“I wanted to encourage those just starting out and getting through the difficult detox. If you are rethinking your decision, know that you are doing the best thing you could ever do for yourself and your family.


“This is a picture of my husband, Kirk. He is 50 and had plans of having to go on disability this year due to the extreme pain in every joint in his body. Walking was extremely difficult. He works 10 hours a day in lawncare. We thought he had lupus or rheumatoid arthritis. Plus he suffered horrible gout attacks that would put him down for days. We ate what we thought was extremely healthy, but now we know that was wrong. He has been on blood pressure medicine, gout meds (x2), reflux medicine 300 mg twice a day, testosterone pills, pain meds and anti inflammatory drugs for 6 years. He would go up the stairs like a 90 year old man. We were in bed at 7 exhausted. He was miserable feeling this way and I was also. He and I both like to be active but our bodies say no.


“The picture on the left was March 2019 and the right is Jan 2020. We started Oct 13 2019 and by day 8 we stayed out of each other’s way. But day ten it turned around. By day 14 some body pain left, energy restored and by day 21 he was completely pain free!!! Praise God! Reflux and gout also gone. He was taken off all meds except bp. But now they are taking him off of those as his blood pressure is perfect.


“He has lost 36 pounds and 5 inches in his waist. Our weight loss slowed during holidays as we had some alcohol but back on track. You can see in the pic on the left it’s a fake grin due to pain, the one in right is the pain free happy man who now runs past me up the stairs!!!

You can appreciate that, despite access to healthcare and prescription medications, Kirk was no better off, continuing to be plagued with incapacitating pain and health conditions with dire long-term health consequences. I don’t believe that we can overstate the impact that the Wheat Belly lifestyle had on this man and the lives of this couple.

I_Love_Amazon: This Book Is An Eye Opener

I started avoiding gluten before it was a household word. I was never diagnosed with celiac, but I just knew I felt better without it. I found this out by accident when I started low carbing and just avoided gluten by default! All my arthritic symptoms, all my stomach problems and low mood just dissipated within three months. When I went off the diet and started eating wheat again, they all returned. When the first edition of Wheat Belly came out, I remember thinking to myself “ finally, someone really gets it.” I am so thrilled to have the revised version. Folk’s today’s wheat is not the wheat of our ancestors. I honestly now liken it to poison, and for a lot of us, it just is. This book is a gem.


Amazon Prime Customer: Incredible Book!

This is an incredible book and makes you never want to eat bread again! I listened to the Audiobook of the original version of this in 2014 and it was eye-opening, and this book underscores those findings. Next time you’re at the grocery store skip the bread aisle, and when you order your next hamburger order it without the bread! This book is a must-read for anybody who wants to kick the bread habit!

Ramen Noodles


 


Here’s one of the recipes from the new Revised & Expanded Edition of Wheat Belly, a recipe for a popular, but horribly unhealthy, favorite: Ramen Noodles. I grew up eating ramen noodles several times a week, since my mom was Japanese. While I don’t miss how awful I felt after eating them, I do miss some of the flavors. So here it is, a way to recreate some of those familiar flavors but, of course, with none of the health problems of wheat noodles nor the synthetic chemicals used for flavor.

Ramen Noodles

As written, this recipe yields dry ramen noodles. To convert to soup, just add 2-3 cups broth (homemade, if available). You can also top off the noodles with pieces of cooked chicken, pork, fish, or beef, or some sliced shiitake mushrooms.


Bonito flakes are dehydrated fish, while nori is dried seaweed that usually comes in sheets of the sort sushi is rolled in. Find bonita flakes and nori in Oriental markets, some health food and specialty food stores, and Whole Foods Market.


Makes 2 servings


1/4 cup sesame oil

2 tablespoons sesame seeds

2 packages shirataki noodles

1/4 cup gluten-free soy sauce, tamari, or coconut aminos

1 tablespoon dried onion powder

2 teaspoons dried garlic powder

1/2 cup bonita flakes

2 green onions, chopped

Optional: 1 sheet dried nori


Rinse the shirataki noodles, then drain.


In large skillet over medium-high heat, heat sesame oil and sesame seeds for 1-2 minutes, stirring frequently. Stir in noodles, soy/tamari/aminos, onion powder, garlic powder, bonita flakes, green onions and toss using tongs for 2-3 minutes, mixing thoroughly.


Remove from heat and serve topped with nori coarsely broken by hand (unless purchased pre-broken or in shakeable form).
