Food Fridays: Easy Tex-Mex Veggie Soup
My husband and I make this often. It’s light, nutritious, cheap, and easy.
It is also gluten and dairy free.
Easy Tex-Mex Veggie Soup
1 T virgin coconut oil

1 large onion, chopped
1 zucchini or cabeza squash, cut in chunks
1-2 carrots, cut in chunks
2 tsp. ground coriander
