Fancy Tomato Salad by Nancy Addison and Maryann De Leo
I love to garden!!
I love picking fresh food straight from my garden!
I know how healthy it is and what kind of seeds it is grown with. That is so important to me.
Who has some wonderful tomatoes from your garden? I love tomatoes and I grew these!
Here is one of my favorite recipes!

Organic gardening expert chef and health expert, Nancy Addison’s organic tomatoes she grew in her garden.
Fancy Tomato Salad
vegetarian/gluten-free/raw
Serve this salad at room temperature or cold on a hot summer day.
The vegetables in this recipe have natural electrolytes and are very hydrating.
Salad Ingredients:
1 cucumber, sliced
1 red or yellow bell pepper, sliced
1 small–medium onion (sweet, Vidalia, or red), sliced
3 large tomatoes, sliced
Dressing Ingredients:
3 T. balsamic vinegar
3 T. extra-virgin organic olive oil
1 T. honey (optional)
1 T. fresh basil, chopped (or 1⁄2 tsp. dried)
1⁄4 tsp. unrefined, sea salt
Directions:
1. Combine all dressing ingredients and set aside.
2. Combine all salad ingredients and toss in a bowl.
3. Add dressing to salad and toss.
Note: When slicing the vegetables, the bell pepper looks pretty when it is sliced so that it retains it pretty shape all around the middle instead of just slicing it lengthwise strips. The onions look really pretty sliced into rings. The tomatoes can be made into chunks.
Serving size: 2 servings

Recipe is: 1 pack strawberries, 1 scoop protein powder, 2 cups unsweetened coconut milk, 4 drops stevia, and 1 tsp pure, organic coconut oil!

Get Fit Challenge!
Ok, I am on a get fit campaign.
Who wants to join me? It’s bathing suit weather and time to get toned. I’m going to start going to exercise classes that use weights, yoga and dance (like zumba). I am going to commit for a minimum of 4 days a week. Who is going to do this with me? I’m heading out this morning to an aerobics class that uses weights. So, let’s get going! It’s for one month let’s get fit challenge!

I had a wonderful time at the Taste of NFL last night at the fundraiser for the North Texas Food Bank. Beautiful evening with some of the best restaurants in town serving up some delicious food at Lake Grapevine.
I met Jason Garrett, the coach of the Dallas Cowboys. It was a night of fun with many of the Dallas Cowboys there to support the North Dallas Food Bank.

Mother’s Day Quinoa Waffles by Nancy Addison
Happy Mother’s Day!
In honor of mother’s day, there may be someone making brunch for their mother today.
This is a recipe my daughter and I made together. Whole Grain Quinoa Waffles I grew up eating waffles; so I always made them for my children. Quinoa is a seed, not a grain. It is gluten free and a complete protein. Amanda also wanted to add some dried cranberries to the batter. They were delicious in our waffles. The cranberries are optional. We just added about a ¼ cup of them to our batter. I am going to share this delicious recipe with you.
Ingredients for about 3 (9-inch) waffles
2 cups whole grain quinoa flour (sifted)
2 T. Xylitol (a natural sugar I like to use when the recipe calls for granulated sugar)
3 tsp. Baking Powder (with no aluminum)
¾ tsp. Sea Salt
1 ½ cups Almond Milk
3 Eggs (separated)
¼ cup Coconut Oil (melted)
¼ cup Dried Cranberries (optional)
Dash Cinnamon (optional)
Drizzle Honey or maple syrup (optional)
A few tablespoons of melted butter (optional)
Directions:
1. Heat up the waffle iron
2. Sift the flour, sugar, baking powder and salt into a bowl.
3. Combine milk and egg yolks and beat in the coconut oil.
4. Add the liquid ingredients to the dry ingredients and stir lightly.
5. Beat the egg whites until they will form soft peaks.
6. Fold the egg whites into the batter.
7. Bake the waffles for about 5 minutes. ( time may vary with various waffle irons)
8. Serve with melted butter (optional), honey or maple syrup with a dash of cinnamon (optional) sprinkled on top.
Variations:
1.Add about ¼ cup of blueberries or banana pieces instead of the cranberries, to the batter for a fruitier version.

As I stood on my balcony tonight, I looked up at the moon and listened to the incredible quiet with just the sound of the ocean waves.
I realized how incredible an experience these last two trips have been for me to Nicaragua. This retreat has been life changing for me.

Dine at a beautiful café and shop at the local shops.
In the late afternoon, we will head out to the retreat center on the Pacific coast in our comfortable van.

Do you need a safe sunscreen this summer? Here is my segment from The Broadcast, KTXD- TV. I have the list in my first book, “How To Be A Healthy Vegetarian.”
I talk about how most sunscreens have allowed the cancer producing rays in and blocked the cancer preventative rays out. These are much better! and some have a bug repellant that doesn’t cause neurological problems. They recorded it last week, because I am taking my rejuvenation retreat in Nicaragua at the moment.

Amanda Addison’s Resolution was passed in Austin, Declaring ” Freedom from domestic violence to be a fundamental human right.”
I’m so proud of my daughter, Amanda Addison, whose resolution and call-to-action declaring “Freedom from Domestic Violence to be a Fundamental Human Right” was passed by the Austin City Council this morning and passed in Travis County last week. She has been working all semester with two other UT Law students on this project. I’m so proud of her determination and the big changes she is already making as a law student!
