There isn’t “hard solid canon evidence” for this, it’s more just a widespread accepted fan interpretation based on what Leonard Nimoy said in interviews compounded with “Jewish vibes” surrounding Vulcans as a whole, to the point that Spock and the other Vulcans being Jewish became “canon”.
