Italian Tomato and Black Olive Pasta

I just wanted a a quick bowl of pasta and I didn’t want to spend a lot of time in the kitchen or have to go to the market. It’s summer and I didn’t even want to have to peel and saute garlic. As I gazed into my pantry, moved a few cans and then continued my review of the refrigerator contents, this is what I found: Dried Spaghetti Italian Stewed Tomatoes Black Olives Olive Oil Parmesan Cheese Perfect – {Read More}

Orange Chocolate Ice Box Pie

While I enjoyed a week of downtime – away from the computer – I came home and peeked in my pantry for something to cook. I had not yet been to the market to re-stock the shelves, but managed to find the following: Orange Jell-O – sugar free Chocolate Graham Crackers Cream Cheese – fat free Whipping Cream – in the freezer I pondered this for a while, thinking of all the creations I could make… that would take {Read More}

Biscuit Beef Barbecue Wraps

If I have to use my oven during the summer, I try to use it ahead of time so the kitchen has time to cool down. This is an easy recipe that uses refrigerator biscuits and hamburger. Don’t have all the ingredients in your pantry? Then just use what you don’t have as inspiration for what you do have and alter the recipe to your pantry! For instance, if you don’t have green onions, use a regular onion. If you {Read More}

Summer Grilling Tips

In the summer I get the most use out of my: Blender for making smoothies Slow Cooker for keeping the kitchen cool BBQ Grill The weather and the time of the day play a big part in which of these I decide to choose for the day. Since I was a girl, barbecuing has been a big part of the summer. As I wrote about in my first “Classics Digest,” Saturday was always reserved for hamburgers; in the winter my {Read More}

Banana and Peanut Butter Smoothie

My obsession with smoothies continues – today I made a Banana and Peanut Butter smoothie as these are two of my favorite things to eat. Smoothies have become my favorite summer breakfast after recently purchasing two smoothie books on Kindle (one I already posted). I’m particularly fond of Healthy Smoothie Recipes – Healthy Herbal Smoothies That Are Nutritious, Delicious and Easy to Make since it uses herbs, which are beneficial for our health and well being. Two of my favorite {Read More}

Streaming Video to Your Home TV

What does this post have to do with In the Pantry cooking – nothing, but I just had to share what happened when my cable company decided to turn a regular basic cable channel into a premium channel! If you have kids and a gaming device, I’m sure you’re already streaming video to your home TV. I have no kids in the home; I don’t play video games; I only have the basic cable service. I used to have full {Read More}

Coffee Peanut Butter Marshmallow Cups

I was on Pinterest one day and someone posted a picture of homemade peanut butter cups they had made. It got me thinking of all the additional things I can do with the recipes that are in my book, Decadent, Sinful Quick Breads. After all, it contains recipes for Peanut Butter Muffins and Peanut Butter Sauce. If you have peanut butter and chocolate chips in your pantry, you can make this recipe today. With just a few tweaks, I could {Read More}

Fruit Vegetible Smoothie with Beets

I’m taking a break from baking and writing and have reverted to my healthy diet. Not only does this help with my general health, but it allows me to take off the weight I gain when writing a new cookbook. I don’t really have to eat everything I bake, but I do have to do the necessary taste tests… and sometimes that leads to “I can’t throw this out – it’s too good.” I can’t tell you how much food {Read More}

Black Bean Brownies

I have been wanting to make a Black Bean Brownie recipe for over two years – since I saw Rocco DiSpirito on TV talking about his new cookbook. This was the first in his series, Now Eat This! At that time he published a few of the recipes from this cookbook on the Internet and I was able to make his version of Macaroni & Cheese. The recipe was quite inventive and the end result very tasty. Imagine my surprise {Read More}
