Amazingly Easy Panko Parmesan Encrusted Tilapia
This fish was incredible! The comments from my family were both complimentary and insulting – at the same time!
Like, “I can’t believe you made this, Mom!” Even I had to admit I shocked myself.
I’ve been a fish-hater the majority of my life. A few years ago, my husband and I went to Bonefish Grill. Mr. J has always loved fish so he ordered something he’d never tried and begged me to taste it. I couldn’t believe I loved this delicate white fish the way it was prepared. I tried to duplicate it...

Dill-Dressed Cucumbers
This simple little dressing is amazing! Fantastic after they’ve chilled for a bit, but hard to stop eating right away! If you use the light sour cream, each serving is only 50 calories. I have no idea how many slices constitute a serving.
1 heaping tablespoon light sour cream (I used regular this time)
2 tsp. coarse salt (or 1/2 tsp. fine)
1 tsp. dried dill weed
1 tsp. vinegar
1 tsp. sugar
1 large cucumber, sliced
Mix the first five ingredients in a small bowl (a resealable c...

Sadly, Utterly Abandoned Ships & Boats
The first two images are wholly fascinating to me. A Civil War romance tale could be easily woven around this lost and abandoned ship.
Further down, the image of the ship in the middle of what appears to be a desert is bizarre, yet scary. How did the vast Aral Sea just dry up? I don’t know, but it’s happened repeatedly throughout the many millenniums of this planet’s existence. You can see that many of the vessels in this Sadly, Utterly Abandoned set have become beached by receding waters. Who...

A Brief History of Henrietta Street, Dublin, Ireland
No. 12, Henrietta Street, Dublin, Ireland by William Murphy on Wikimedia Commons.
You have to read it to believe it. I was looking for images of cool entrances and this one came up. The history sucked me in, my heart hurt for the people who had to live behind these doors. Photographs and history by William Murphy on Wikimedia Commons.
“Nos. 11 & 12 (south-side), built by Luke Gardiner as a pair between 1730 and 1733, according to the designs of Edward Lovett Pearce. No. 11 was first occupied by...

Sadly, Utterly Abandoned Vehicles
There are far too many cool, abandoned vehicles out there. Some not so far gone that they couldn’t be restored. I wish there was a hookup database for people to input their finds and restorers to rescue. I’d give anything to have the Fargo in the last picture. I seem to be a little partial to trucks.
I’ll definitely have to do another vehicles series – I didn’t have time to include all that I wanted. You’re welcome to post links in the comments to any cool specimens you may have or stumble u...

Falling Skies Season 3 Coming Soon!
Tom (Noah Wylie) on a horse works for me! The end of season 2 was a huge cliff-hanger and it sounds like season 3 is going to be better than the last! For a sneak peek at what’s ahead, check out the official episode descriptions for the two-part season premiere below. And if you just can’t wait for S3E1, check out a few trailers below! And if that’s not enough, watch a two-minute video of the premiere following the trailers! Don’t watch if you want to be totally surprised during the premiere!...

Sadly, Utterly Abandoned Churches & Cemeteries
Neglected and abandoned graveyards can be found everywhere in the world. Headstones as lost and forgotten as the lives they were set to remember. Churches whose once devout congregations have dwindled to nothing, leaving their houses of worship to waste away into nothingness, eventually to be swallowed up by the earth from which they sprang. It’s really quite sad.

Feeding the Hungry
Everyone who knows me knows how scattered I am. I’m passionate about so many things, I sometimes lose track of my thoughts. My mind flits from one thing to the next and it’s a wonder I complete any one task.
As usual, I have lots to do today, but I’ve been taking my sweet time getting started. My Dad and sister are flying down on Monday and I’ve got a lot of cleaning to do. Add to that, the tubs and toilets aren’t draining, but the sinks are. I can’t figure out how on earth this house was plum...

Sausage, Egg, & Cheese Cups for Breakfast on the Go
My Florida bff kept telling me I should make these. I don’t know what took me so long. All my guys love them and they were simple and straightforward to make. Grab 1 or 2 from the freezer, zap in the microwave, and eat. Or top with a bit of salsa, sour cream, and bacon bits if you’ve got a few extra minutes to sit at the table with your morning paper and glass of juice.
Sausage, Egg, & Cheese Cups
Makes 30-32
1-lb. turkey sausage
1 dozen eggs (or the equivalent of egg beaters)
2 cups shredded ched...

Sadly, Utterly Abandoned Amusement Parks
For some reason, abandoned amusement parks have more of an apocalyptic feel than other places or things. Giggles and grins are silenced and wiped away; screams of delight hauntingly echo in the derelict spaces. The thrill of adventure now only half-forgotten memories of a time long ago.
