Walking The Cotswolds, Part 1
Many people have a travel bucket list. Taking a walking holiday in the Cotswolds has long been at the top of mine.
In 1968, the Cotswolds was designated An Area of Outstanding Natural Beauty. That makes it the second largest protected landscape in England. Encompassing more than 750 square miles in south central and south west England, the Cotswolds is home to picturesque villages that could have been plucked out a fairy tale and mile upon mile of bucolic, unspoiled scenery. It is also home to the Cotswolds Way, a 102-mile National Trail that goes from Bath to Chipping Campden.
A thriving tourist industry has sprung up around people who want to walk the entire length of Cotswolds Way, with tour companies that book walkers into B&Bs and transfer luggage from one village to the next along the route. Though taking a hundred-mile hike and staying a rustic little B&Bs along the way sounded like heaven to me, the same couldn’t necessarily be said of my husband.
ROUGHING IT ISN’T FOR EVERYBODY
Don’t get me wrong, The Chairman is a terrific travel companion. But his interest in the great outdoors is minimal. And his idea of roughing it is staying at a Hampton Inn instead of The Four Seasons. Getting him on board for my bucket list trip to the Cotswolds was going to require some compromise on both our parts and a bit of research for me.
An Internet search for “Cotswolds luxury walking tours” brought me the Cotswolds Walks website, a tour company that offers a variety of guided or self-guided walks in the region, everything from short, two-night breaks to full Cotswolds Way walks that last from 6 to 11 days.
After looking at options and consulting with The Chairman, I booked a “6 night/5 day Luxury Tour” in early September, after my epic textile shopping excursion in Paris and just before our spectacular visit to Highclere Castle (aka Downton Abbey). My husband perked up considerably when he saw the list of elegant hotels we would be staying in. The walking portion of our Cotswolds tour would total 38 miles of walking instead of the whole hundred-plus. Also, we would stay two nights in each hotel rather than transfer every day. This interesting but somewhat less ambitious itinerary was a good compromise; I’d get my long, scenic walks and he’s get his high thread-count sheets. Everybody was happy.

DAY ONE – WALKING THE COTSWOLDS BEGINS
We took a train from London to Moreton on Sunday afternoon. A taxi driver, arranged through the tour company, met our train and loaded our bags. We then arrived at the Cotswolds House Hotel in Chipping Campden, our home for the next two nights.
Like all the hotels we stayed in, The Cotswolds House is a historic property. So while it didn’t necessarily have all of the creature comforts of a modern hotel, each room came with its own set of charming quirks. “See if you can guess how this shower works” became our favorite game at each new hotel. The elegance and unique character of each property more than made up for the quirks. So did the helpfulness of the staff, who couldn’t have been kinder or more professional. The Cotswold House Hotel, as well as all the other places we stayed, were definitely 5-star.
After we settled into our charming suite with the gable windows enormous bathtub, we went downstairs for a pre-arranged meeting with Andrew Guppy, owner of Cotswold Walks. Andrew and I exchanged many emails and some phone calls in the months before our trip. He was always cheerful, flexible, superbly helpful, and had a really cool British accent. Since I’d already mentally turned him into a character for one of my books, I was looking forward to meeting him.
OUR TOUR GUIDE FOR WALKING THE COTSWOLDS
Andrew was taller than I’d imagined, but just as nice. He took time to answer all my questions and help me download and learn to operate a very accurate GPS trail map. He even gave us a coffee-table type book with photos of The Cotswolds to take home. And after he learned that we didn’t yet have plans for dinner, he made us a reservation at the Jackrabbit Restaurant.
It was a brilliant suggestion! The atmosphere was elegant but very cozy and the food was exquisite. We generally avoid carbs but the phenomenal house made rolls were so good that we couldn’t resist a second helping. We justified the rolls, and the sticky toffee pudding at the end of the meal. After all, we’d be doing so much walking on this trip, we were entitled to a small indulgence. This soon became a recurring theme.
But it really would have been a crime to skip the bread, and everything else. The fresh pea soup I had for my appetizer was so divine and so beautifully presented. I couldn’t stop myself from texting photos to friends! It was a wonderful, romantic meal and the perfect way to kick off our Cotswolds adventure.
DAY TWO – CHIPPING CAMPDEN TO HIDCOTE GARDENS
Excited to embark on our first day of walking, we woke up bright and early and went down to the hotel dining room. We became acquainted with the joys of a proper English breakfast, which was included in the tour price. Every day, we were given the opportunity to begin the meal with porridge and/or a trip to a buffet with fruit, pastry, yogurt, and a selection of cereal. This, we soon learned, was just the appetizer. Our main course was ordered from the menu and included dishes such as eggs benedict and omelettes. Or we could order the “full English” with eggs, sausage, bacon, and grilled mushrooms and tomatoes, all accompanied by coffee or tea and juice.
As we waddled out of the dining room, I couldn’t help but reflect on all the sad, carb-heavy breakfast buffets with underripe melon and rubbery powdered eggs I have endured during my many years of hotel travel in the U.S. I felt quite embarrassed when I considered what English tourists must think about our dreadful excuses for breakfast in America. But there wasn’t too much time for such pondering; we had seven and a half miles of walking ahead of us.
If the idea of walking miles and miles every day doesn’t sound like fun to you, there’s something you need to know about walking in the UK. It’s interesting. And completely different than hiking in the US. Let me explain.
Americans don’t really walk, not the sense that Europeans do. Instead, we hike, usually in state or national parks. There’s nothing wrong with hiking, I do it all the time. But when you go on a hike here, what you’re mostly going to see most of the time, is trees. Yes, there are sometimes rivers, lakes, or waterfalls. I often pick hikes that lead to some water feature because that’s the payoff for all that hiking through all the trees which, while beautiful, are usually kind of similar.
WALKING THE WALK
But walking in the Cotswolds, and other places is Europe, involves walking through an ever-changing landscape. Why? Because you aren’t walking in a park, you’re frequently walking through or near privately owned land and that means visual variety.
Passing through a gate, you might enter a field of bright orange pumpkins, then cross into another field with the biggest parsnips you’ve ever seen. Another few turns and you climb over a stile and find yourself in a meadow populated with fluffy but disinterested sheep. Then you go through another gate into a woodland, then cross a bridge onto a country road. The road will lead you into a village of three hundred year old, thatched roof cottages, which, inevitably, will lead to a lovely little pub that features inexpensive beer and delicious lamb pie.
Listen, I am a proud and patriotic American. Hiking in some of our state and national parks is an awe-inspiring, soul-expanding experience. But when it comes to walking, the U.S. really doesn’t hold a candle to the U.K.
THE VIEW
Our first day of walking took us through farmland, woodlands, and villages and led us to lovely Hidcote Gardens. This National Historic Trust property was created by American horticulturist, Major Lawrence Johnson. Hidcote Gardens is known for its Arts and Crafts movement influences and has many outdoor “rooms” that have been intricately designed.
We spent a good hour and half enjoying the gardens and going through some of the exhibitions on displays in the manor house, including a very interesting explanation of the Arts and Crafts movement in the Cotswolds. We also enjoyed a well-priced lunch in the tearoom, featuring produce grown at Hidcote. Before we left, I made trip to the gift shop and found some really good hiking socks and a National Historic Trust hat that I love and wore on every day of our trip.
After lunch and shopping, we looped back to our hotel by a different route. We were following directions in the book provided by Cotswold Walks, which was quite helpful. The directions were very detailed and accurate but it took time to fully grasp the terminology – lane versus road versus path, for example. Getting lost and retracing our steps a couple of times made our seven and a half mile walk closer to nine, but that was all right.
More walking the Cotswolds meant that we felt even less guilty about the delicious chicken, bacon, and leek pie we enjoyed in the bar at Eight Bells, a traditional and very cozy pub. Something interesting about English restaurants, nearly all of them allow dogs inside! Next time we come to England, I hope we can bring our little Cavalier King Charles along.

DAY THREE – STANWAY TO WINCHCOMBE
On this day we were to change hotels, so we packed before partaking in another sumptuous breakfast. Our taxi driver was supposed to take us on a short sightseeing visit to Broadway Tower before dropping us off in Broadway. We would then have departed on an eleven mile walk on the Cotswolds Way to Winchombe.
As it turns out, our driver was pressed for time and we were a bit sore from the previous day’s exertions. Instead we simply drove through Broadway and let the driver drop us at Stanton, which cut around 3 miles off the walk. The weather was perfect for walking, with clear skies and temperatures in the high sixties. We enjoyed more beautiful scenery. In Stanton we took some time to admire Stanton Manor and walk through the grounds of the nearby church.
A little more walking brought us to Hailes Abbey, which was home to an order of Cistercian monks. It was founded in 1245 by Richard, Earl of Cromwell, a younger brother of King Henry III. When Henry VIII ousted the Catholic Church and declared himself head of the church in England, Hailes Abbey was dissolved along with numerous other religious institutions.
Sadly, today the abbey is little more than a ruin. The foundation outline and a few walls of the original structure remain so it’s possible to get a sense of the size and grandeur of the building. There is also a very interesting exhibit inside the visitors center, which gave us a better understanding of the abbey’s operations and the history of the period.
A MISSED OPPORTUNITY
We were still a little tired so rather than go to Sudley Castle, we walked two more miles directly to Winchombe. We shared a late lunch at a local pub before meeting our taxi driver. In retrospect, this was a mistake. We had failed to read up on the castle ahead of time and so we didn’t realize what a fascinating place it is. For example, Henry VIII, Anne Boleyn, Lady Jane Grey, Queen Elizabeth I and Richard III had all played a part in Sudeley’s story.
I hope that we’ll be able to return to the Cotswolds in the future. If we do, a visit to Sudley Castle will definitely be on the itinerary. As it was, we were happy to meet our driver for the ride to Lower Slaughter and check into a large, beautiful, well-appointed room at the Slaughter’s Country Inn, another five-star property.
Our luggage was waiting for us, so after a quick shower and change of clothes, we went to the bar for a snack. We were introduced to our adult beverage of choice for the rest of our trip – Cotswolds Gin with an elderberry tonic and a twist of grapefruit. The Chairman and I raised our glasses to toast another wonderful day walking the Cotswolds. We felt tired but happy, and settled down to discuss the next day’s itinerary.

Yesterday morning, I sported a sweater and took the dog for a walk. I reveled in the slight chill in the air and the gold and auburn hues peeping their way through the trees. My Cavalier King Charles, Showgirl, seemed to have an extra pep in her step, too.
We are officially in Fall, or autumn, as some would say. While I know that an arbitrary date on the calendar doesn’t mean much when it’s obvious that temperatures and climates vary greatly throughout the country, it’s certainly feeling cooler where I am in Central Oregon. It brings a feeling of anticipation of the weeks ahead – the vibrant fall foliage, the pumpkins standing guard on the porch, the savory fall flavors and food like sage, apple, cinnamon, and butternut squash. The holidays off in the not so distant future. It’s one of my favorite times of year. Of course, I say that about every season. But the changing of the seasons is one of life’s most profound but simple everyday miracles. Simple or not, miracles should be savored and celebrated, none more so than the arrival Fall.
One of the more divisive topics of Fall autumnal discussion is when it is appropriate to order a pumpkin spice latte from Starbucks. There are sports rivalries, there is political debates, and then there is the subject of this seasonal blend of flavors that people will fight over until the bitter end.
Okay, sure. Maybe I am being a bit dramatic. I’m of the opinion that you ought not to indulge pumpkin spice until after Fall officially begins. Before that is just wishing summer away, which is a shame. As I said, each season is a miracle to be savored and celebrated in it’s proper turn. So here we are, officially now in Fall. You may bring on the pumpkin spice and indulge at will, say I. Finances and Football: How to Create a Financial Plan
I’m thrilled to welcome back my fierce friend, Peggy Doviak, to share her wisdom on how to create a financial plan.

Is there anything more fun than college football? Possibly, creating a financial plan. You don’t agree? You might be surprised to learn that football and finance have more in common than you might think. They both require a good offense, a solid defense, and some effective special teams.
Here’s how to create a financial plan that will set you up for success!
Football Starts With Offense
To play financial offense, you have to be proactive with your money. Your game plan begins by creating a budget. Take a nonjudgmental look at both your income and your spending. Once you know where you are, organize your information into expense categories and reasonable targets. You can make some spending adjustments if necessary.
Your budget and cash flow analysis provide the information that will drive the creation of your emergency fund, life insurance needs, and retirement requirements.
Your next offensive move is to participate in your company retirement plan. At a minimum, you should take advantage of any employer match. If you don’t have a plan at work, then open and fund an individual retirement account (IRA). It’s important to save enough money to allow you to have a comfortable retirement. This can be scary when you remember that if you retire at 65, the money might need to last for 30 years or more! You might want to talk to a financial planner rather than scrambling by yourself.
Keep The Football Moving
Finally, move your financial football by reviewing your investment portfolio holdings. The asset allocation, or how your money is invested, should match your risk tolerance level. Review your holdings and be certain you understand what they are and why you own them. Additionally, look at the fees associated with your funds to be sure they are not excessive and are appropriate to your return.
Index funds typically have lower fees than investment products with managers. The manager’s strategies or investment returns should be worth what you are paying for them. Before you finish, complete some tax planning to be sure your portfolio maximizes tax savings opportunities.
Although your financial offense is important, games are won by the defense. You must protect your financial success from tackles that bring you up short of your goals. Important steps include saving an emergency fund, having appropriate insurance, and creating an estate plan.
Play Defense
First, blitz your risk by creating an emergency fund. Although your ultimate goal is to save money to cover several months of expenses, begin by trying to save two-weeks of your bills. Once you achieve success, then save two more weeks. Then two more—until ultimately, you have sufficient savings. Emergency funds should be easy to turn into cash without loss of principal. As a result, this money is probably better in a bank than in the stock market. A market correction right before an unexpected expense could leave you without enough money.
Then, block potential financial disasters by purchasing adequate insurance. If your beneficiary is your partner, your budget and cash flow needs can help you purchase the correct type and amount of life insurance. Basing your insurance purchase on the money needed for your heirs to live comfortably through all stages of their life provides a better estimate of your need than using a rule of thumb (like a multiple of your salary) or simply selecting a random amount. You should also review other insurance policies, including home, auto, disability, and long-term care for adequate coverage.
Game Plan For The Future
Your final defensive play protects your loved ones. Create an estate plan with the help of an attorney. Your documents should include powers of attorney for finance and healthcare, an advance directive (living will), and documents that distribute your assets according to your wishes. You will likely need a will and may require a trust. Don’t forget to make a list of where your assets are located and leave it in a place your beneficiaries can find. Be sure to include lock boxes, online banking accounts, and other items of value that might be difficult to find. Offense and defense play most of the game, but often, the win rests on the toe of the kicker—the special teams. Your financial special team includes a CPA, attorney, and CERTIFIED FINANCIAL PLANNER TM practitioner.
Be sure your financial professionals don’t drop the ball and provide appropriate support to help you meet your financial needs. If they don’t have adequate background in your issue, they should refer you to someone else. Further, they should talk to you respectfully and answer your questions. And remember only to do business with financial professionals who are willing to serve as your fiduciary. This means they have a legal obligation to put your best interest first.
All right, I’ll admit that creating a financial plan might not be as much fun as the Saturday afternoon game. However, the outcomes last longer and are more important—and that’s worth more than a national championship! Go team!

Proper English Tea: The Perfect Downton Abbey Watch Party
Taking an afternoon break to enjoy a soothing cup of hot tea has long been a part of my workday. But my recent trip to England and a visit to Highclere Castle have renewed my appreciation for serving and enjoying that most satisfying and civilized of snacking rituals, A Proper English Tea.
(Grammar snobs: please don’t write to me about the incorrect usage of capital letters here. I’m just trying to indicate that a truly proper tea is something of an occasion. I’m also trying to be funny. Thank you.)
Even if you’re the only guest, and perhaps especially then, hosting and enjoying a proper tea is a wonderful way to add touch of elegance and tranquility to your life. It’s also a lot easier to accomplish than you might suppose.
Yes, a proper tea may involve multiple courses and a full-blown decorating scheme with accompanying floral arrangements but simpler variations on the theme can be just as proper and just as enjoyable. The point of a proper tea is to make space in your day to nourish your body, renew your energy, and refresh your spirit.
But before we go into all that let’s talk about what constitutes “tea”, beyond the beverage.
As it turns out, there are several different types of teas and Americans frequently muddle the definitions.
AFTERNOON TEA VS. HIGH TEA
Americans frequently speak of “high tea” when they actually mean “afternoon tea”. Let’s clear up the difference, once and for all.
Afternoon tea consists of a pot of tea (as I learned on my recent trip to Highclere Castle, champagne makes a wonderful substitute) as well as three courses: finger sandwiches, scones served with clotted cream or jam, and a selection of miniature desserts. Though afternoon tea is frequently presented on a pretty cake stand and served on the best crockery or china, it was originally meant to be a casually elegant occasion, taken on sofas or chairs rather than a table.
In England, high tea is more of a late afternoon or evening meal, with heartier foods such meat pies and substantial sandwiches, and served on regular plates. The fact that it is served at a dining table, rather than while reclining on a low couch in the drawing room, is what makes it “high”. So if you go to England and order “high tea,” don’t be surprised if someone brings you a pork pie.
And in parts of the UK, including Scotland, what Americans would call dinner or supper is simply referred to as “tea”.
CREAM TEA
In the UK, a “cream tea” is a truncated version of afternoon tea. Besides the tea itself, a cream tea features scones, served with a clotted cream and jam. Hosting a cream tea can be just as much fun as serving afternoon tea, but considerably less work.
Since returning from my trip, I’ve been creating my own personal cream tea ritual, which involves a lovely pot of properly steeped tea and bread and butter or a cookie to stand-in for the scones. I’ve decided that a proper tea is less about menus and dishes than it is about mind set. It’s a commitment to make space in your day for a few minutes of peace, quiet, and sustenance.
Still, observing a few of the niceties and rituals can add to the pleasure of a proper tea.
SETTING THE STAGE, ON THE TABLE
If you own a tiered cake stand, dust it off and use it for the centerpiece. Additionally, use your best dishes and make it a little more special with feminine touches such as lace doilies, folded napkins, or a bouquet of fresh flowers.
Charity shops or yard sales are a good source for beautiful china to get that authentic look. You’ll need a fancy little teapot as well as teacups and cake plates. It might also be nice to have a cake slicer, as well as a creamer pitcher and sugar bowl. If you’ve been looking for an excuse to break out your grandmother’s sterling silver, this is the perfect time.

SCONES, SANDWICHES AND SWEETS!
There are no end of possibilities when it comes to preparing the repast for a proper tea! I’ve included several recipe links below.
Cucumber dill finger sandwiches are one of the more traditional tea dishes for the British.
Ditto to egg salad sandwiches, a true standard of an afternoon tea.
The lemon blueberry tea cake that I made prior to my trip to channel some of my excitement for the trip is a perfect dish for this kind of party!
Scotch eggs are a classic twist of the deviled egg variety. A little heavier than just a deviled egg, they will add protein and a little more ‘heft’ to your menu.
Chocolate eclairs make for a tasty treat that is finger food only, a traditional requirement of tea party food.
And could there be a sweet treat that sounds any more British than a ‘jammy dodger’ – make them if only for the excuse to teach the phrase ‘jammy dodger’ to all your friends!
And if you’re planning to make proper teas a regular ritual, you might consider getting a cookbook geared toward teatime treats and curating your afternoon tea experience! Both of the two I recommended are loaded with pictures for inspiration and elegantly English recipes.
LET’S TALK ABOUT THE ACTUAL TEA
Like the foods you serve, when it comes to beverages, there are no end of possibilities for your proper tea. My personal preference is for the classics – English Breakfast or Earl Grey – but a bit of variety can be fun too. Peppermint, Chamomile, or Oolong are all wonderful choices. When it comes to tea, what matters most is that it be properly prepared and served.
Always go with loose leaf tea if you can, but since we’re in America people will understand if you are using sachets or tea bags. Tea should be served with milk, sugar, and lemon on the side. When serving yourself or guests, add the milk after the tea.
Be sure that the tea water is piping hot when added to the pot, but not boiling. (You could burn the tea and this would be tragic!). After you pour the water into the teapot, sit back and think lovely thoughts or engage in conversation for at least five minutes. Six would be better, as tea needs ample time to steep.
The Mood For Tea
And, like so many of life’s finer things, tea should be enjoyed at a leisurely pace. This is not a time to rush. In fact, not rushing the entire point of a proper tea.
But, if you feel like gilding the lily a bit, do the following while enjoying your tea:
Extend your pinky finger.
Dunk your biscuits.
Use lots of British words.
Wear an adorable hat.
None of the above is required, or really even proper. But I can tell you from experience that it makes the partaking of a Proper Tea even more fun.

Downton Abbey In Real Life: A Visit To Highclere Castle
Our two magical weeks of European travel are now at a close. All that’s left now are incredible memories and a lot of laundry. (SO much laundry…)
I already shared a bit about our adventures is Paris and have another post in the pipeline with plans for at least one or two posts on the second leg of our tour, our walking holiday in the glorious Cotswolds region of England.
But since the Downton Abbey movie premiers next week for United States audiences and many of us are counting the days until September 20th , I thought I’d write about the final, capstone event of our trip today. That’s right, I’m talking about our visit to Highclere Castle, aka the REAL Downton Abbey.
Downtown Abbey: Almost as Good as Christmas
The first thing I did after booking flights to the UK several months ago was to visit the Highclere Castle website to reserve tickets for a tour. Like so many fans of the Downton Abbey series, a visit to Highclere has been on my bucket list for years. So you can imagine my disappointment when I discovered that our trip to England would take place only days after the castle’s public tours would close for the season. I felt like a kid who’d just been informed that Christmas had been cancelled!
But then I noticed a special event called Costumes and Cocktails that coincided with the last day of our trip. (Hooray! Christmas was back on!). I quickly reserved two tickets plus a “champagne tea hamper” before phoning The Chairman with the news of our good fortune.
Oddly, The Chairman wasn’t quite as excited as I was.
This may have something to do with the fact that, though he was a big fan of Downton in the early years of the series, he never quite forgave Julian Fellowes for killing off Cousin Matthew. (And really, who can blame him? So many of us still carry scars from that episode.) Still, by the end of our visit, even The Chairman admitted that Costumes and Cocktails had been a delightful day and a truly memorable experience.
Downton Abbey: From The Outside
Though we wouldn’t be allowed to enter the house until afternoon, our tickets permitted us to be on the grounds all day. This was exactly what I planned to do. But when the weather turned chilly, I started to wonder if we should arrive later in the day. Wandering around the grounds all day and shivering didn’t sound like much fun.
I ended up sticking with my original plan and I’m so glad I did! There was so much to see
and do! It was a bit like walking onto the set of a Midsomer Murder episode where the entire
village is invited to a fete at the manor house. Fortunately, there no dead bodies were involved, just a lot of music, food, fun, and tons of wonderful costumes! People went all out with their 1920’s garb and we really enjoyed seeing them.
The Chairman and I did actually discuss dressing in costume but limited luggage space made that impractical. I did manage to look fairly English just the same, dressed in my woolly jumper (that’s Brit for sweater) and a hat from the UK National Historic Trust, accessorized with that most British of Beverages, a Pimm’s Cup. Cheers!
Downton Style Entertainment
A full agenda of entertainment was available in the main marquee (that’s Brit for big white
tent). The Gatsby Girls wowed the crowd with energetic, choreographed versions of The
Charleston. Though Chairman and I sat on the sidelines when the Girls taught a few basic steps to the audience (rubber soled shoes are not ideal for dancing), when Alex Mendham and his Orchestra took the stage, I couldn’t keep from tapping my toes. For a few minutes, I really did feel like I’d been transported in time to a 1920’s speakeasy. I’ll definitely be ordering a few of Mendham’s CDs to play at home.
We also enjoyed music from Watership Brass, the Newbury Town Band, and a fun, slightly silly performance of Morris dancing. It’s a type of traditional folk dancing that is meant to be a bit tongue in cheek.
As if all that weren’t enough, we took a ride on a vintage, steam-powered carousel, played a few lawn games, and checked out incredible displays of authentic vintage cars and clothing. The clothes had me absolutely drooling! I really think it might be time to bring back some of those fabulous 1920’s fashions. I do love a good hat.
Not High Tea, But Highclere Tea
One of the highlights of our afternoon was a proper and truly spectacular tea.
It featured a dazzling and very filling array of savory sandwiches, scones with clotted cream, miniature desserts, and a half bottle of champagne. The food was all served up in a beautiful floral box embossed with the Highclere Castle logo. It was all delicious and so beautifully presented.
I really, really, really wanted to bring the box home but, sadly, there just wasn’t room in the luggage. The suitcase was even more stuffed after my visit to the gift shop. I purchased presents for family and a signed copy of “Lady Catherine and the Real Downton Abbey”, written by the Countess Carnarvon. I was also very tempted by copies of Christmas at Highclere and Entertaining at Highclere but, in the interest of luggage conservation, decided to order them when I got home.
(By the way, I perfected a recipe for this lemon blueberry tea cake to get in the spirit of all things British. I recommend baking it in preparation for the movie!)
We also toured the fascinating Egypt exhibit, which told the story of the 5th Earl of Carnarvon’s archeological expeditions. Until that moment, I hadn’t realized that he and Egyptologist Howard Carter were the men who discovered the tomb of King Tutankhamun. Nor did I know about the Earl’s tragic and untimely death, only weeks after the opening of the tomb. The history of Highclere Castle and the people who have lived there, both upstairs and downstairs, is simply fascinating.
Downton Abbey: Behind The Scenes
Finally, after a busy morning at the fete, it was time to tour the actual castle! Unfortunately,
the taking of photographs inside the house isn’t allowed, so I can’t share a pictures. But I can tell you that it was just as amazing as I had imagined it would be! We toured the library, salon, dining room, grand staircase, etc. And even the bedrooms that “belonged” to Ladies Cora, Sybil, Edith and even the room where the notorious Mr. Farouk met his demise, I could envision every character and relive every episode. It made me even more excited about the upcoming movie.
Our visit to Highclere really was a fantastic way to end a fantastic journey. Having been there in person has made me even more excited about the release of the Downton Abbey movie and eager to learn more about the real life residents of this grand, beautiful and historically significant home.
Whether or not you’re a fan of Downton Abbey, if you’re ever in England, I urge you to include a visit to Highclere Castle in your itinerary. It’s a house, and a day, you’ll never forget.

The Perfect Fall Salad: Roasted Cauliflower with Honey Tahini Dressing
While I’m not jumping head first into a pumpkin spice latte (there’s a time and a place for that, Fierce friends, and, in my humble opinion, it happens on the first official day of fall), I’ve noticed that the flavors of summer are definitely phasing out. The offerings at the Farmer’s Market are already shifting. The merchandising displays at the grocery store have morphed into shameless autumnal extravaganzas.
With summer coming to a close, I’m thankful that I enjoyed a lion’s share of fresh tomato sauce, summer salads like this cherry tomato couscous number or my summer’s bounty quinoa salad or my farmer’s market carrot salad. I really got the most out of summer.
And I’m also looking forward to the impending butternut squash, cozy sweaters, crisp mornings, juicy apples, hot soups, and even the humble chicken stews.
But that’s a few weeks off yet. Right now, we are in that weird transitional season just before full-blown pumpkin everything. When I made this cauliflower salad the other day, I realized that it’s a great salad year round. You can easily substitute different herbs based on what’s at the store and cauliflower is a year long delight. The roasted and caramelized cauliflower brings a hint of autumn and spice while the lemon and herbs keeps it just a little bit summery.
Why I Love Cauliflower Salads
Let’s talk about how much I love cauliflower. There’s something about this cruciferous vegetable that is just so satisfying. When the right spices are applied, it is just as filling as a big, meat-filled dinner. It’s one of those stick to your ribs vegetables, and when I am trying to watch what I eat and enjoy more veggies, it’s my go to.
What’s more, this type of veggie – along with things like Brussel sprouts and broccoli – are proven to reduce our risk of cancer when we have several servings each week, according to Web MD.
That’s all of the endorsement I need to eat something delicious multiple times a week. No problem.
But how do you turn a head of cauliflower into a meal? You put it on a salad, as yours truly will show you below. Or you throw it in some tacos like the Modern Proper, or even a burrito rice bowl like Pinch of Yum. Brilliant!
Last winter, I adored these Cauliflower and Avocado Shawarma Wraps. My recipe for this cauliflower salad borrows several of the flavors of the wraps and puts them in a beautiful, flavorful salad.
If the slightly spicy cauliflower and chickpeas weren’t enough already, the fresh herbs give this salad a little more personality. The sweet and tangy homemade tahini and honey dressing just make the whole thing break into an Hallelujah chorus of joyous flavor.
Plus, the savory aromas that will fill your house will really make you look like you know what you are doing. It’s a dish that’s sure to impress family and friends. And why not? Preparing a fall salad that’s this hearty, healthy, and delicious is a pretty impressive feat.

The Perfect Fall Salad: Cauliflower, Chickpea with Honey Tahini Dressing

Description
If the slightly spicy cauliflower and chickpeas weren’t enough already, the fresh herbs give this salad a little more personality. The sweet and tangy homemade tahini and honey dressing just make the whole thing break into an Hallelujah chorus of joyous flavor.
Ingredients
1 large head of cauliflower, cut into bite-size pieces
1 can chickpeas, drained and rinsed
1/4 cup extra virgin olive oil (I use California Olive Ranch!)
1 tablespoon chili powder
2 teaspoons smoked paprika
1 clove garlic, minced
kosher salt and black pepper (I used a pinch of Smoked Maldon Sea Salt Flakes here for a little extra savory note!)
5 cups Organic Girl Protein greens or crisp greens of your choice
2 cucumbers, peeled and sliced on the diagonal
juice of half a lemon
1/4 cup fresh herbs (whatever you have left in your garden – basil, dill, parsley, all would be delicious)
2 tablespoons fresh chopped chives
4 oz goat cheese, crumbled
2 avocados, sliced
Honey Tahini Vinaigrette
1/4 cup extra virgin olive oil
2 TBS honey
2 TBS dijon mustard
2 TBS tahini
2 TBS apple cider vinegar
juice of 1 lemon
kosher salt
Instructions
Preheat oven to 425.
On a baking sheet, toss the cauliflower, chickpeas, oil, chili powder, paprika, garlic, and a salt and pepper. Toss well.
Roast for 25 minutes, or until the cauliflower starts to pick up a little golden-brown color. Once it comes out of the oven, squeeze the lemon all over it and toss. This needs to cool slightly so it doesn’t wilt the rest of the salad.
To make the vinaigrette, combine all ingredients in a mason jar and shake shake shake! Add salt and pepper to taste.
In a large pretty serving bowl, combine the greens of your choice, cucumber slices, and fresh herbs. Add the roasted cauliflower and chickpeas in with the salad. Add the avocado and feta cheese right on top.
Drizzle on the vinaigrette, toss, and serve.

The Perfect Fall Salad: Cauliflower, Chickpeas & Basil with Honey Tahini Dressing
I’ll let you in on a little secret. I’ve been craving Fall flavors for weeks now. It’s not that I’ve been wishing summer away – I most certainly enjoyed a lion’s share of fresh tomato sauce, summer salads like this cherry tomato couscous number or my summer’s bounty quinoa salad or my farmer’s market carrot salad – but my body just needs a little more savory and spice to usher in the new season.
Bring me the sweet butternut, the pumpkin spice lattes, the sweaters, the crisp mornings, the apples, the red wine, the soups, the humble chicken stews. Fall, I am ready for you!
Why I Love Cauliflower Salads
Let’s talk about how much I love cauliflower. There’s something about this cruciferous vegetable that is just so satisfying. When the right spices are applied, it is just as filling as a big, meat-filled dinner. It’s one of those stick to your ribs vegetables, and when I am trying to watch what I eat and enjoy more veggies, it’s my go to.
What’s more, this type of veggie – along with things like Brussel sprouts and broccoli – are proven to reduce our risk of cancer when we have several servings each week, according to Web MD.
That’s all of the endorsement I need to eat something delicious multiple times a week. No problem.
But how do you turn a head of cauliflower into a meal? You put it on a salad, as yours truly will show you below. Or you throw it in some tacos like the Modern Proper, or even a burrito rice bowl like Pinch of Yum. Brilliant!
Last winter, I adored these Cauliflower and Avocado Shawarma Wraps. My recipe for this cauliflower salad borrows several of the flavors of the wraps and puts them in a beautiful salad.

The Perfect Fall Salad: Cauliflower, Chickpea with Honey Tahini Dressing

Ingredients
1 large head of cauliflower, cut into bite-size pieces
1 can chickpeas, drained and rinsed
1/4 cup extra virgin olive oil (I use California Olive Ranch!)
1 tablespoon chili powder
2 teaspoons smoked paprika
1 clove garlic, minced
kosher salt and black pepper (I used a pinch of Smoked Maldon Sea Salt Flakes here for a little extra savory note!)
5 cups Organic Girl Protein greens or crisp greens of your choice
2 cucumbers, peeled and sliced on the diagonal
juice of half a lemon
1/4 cup fresh herbs (whatever you have left in your garden – basil, dill, parsley, all would be delicious)
2 tablespoons fresh chopped chives
4 oz goat cheese, crumbled
2 avocados, sliced
Honey Tahini Vinaigrette
1/4 cup extra virgin olive oil
2 TBS honey
2 TBS dijon mustard
2 TBS tahini
2 TBS apple cider vinegar
juice of 1 lemon
kosher salt
Instructions
Preheat oven to 425.
On a baking sheet, toss the cauliflower, chickpeas, oil, chili powder, paprika, garlic, and a salt and pepper. Toss well.
Roast for 25 minutes, or until the cauliflower starts to pick up a little golden-brown color. Once it comes out of the oven, squeeze the lemon all over it and toss. This needs to cool slightly so it doesn’t wilt the rest of the salad.
To make the vinaigrette, combine all ingredients in a mason jar and shake shake shake! Add salt and pepper to taste.
In a large pretty serving bowl, combine the greens of your choice, cucumber slices, and fresh herbs. Add the roasted cauliflower and chickpeas in with the salad. Add the avocado and feta cheese right on top.
Drizzle on the vinaigrette, toss, and serve.

Fabric and Textile Shopping in Paris
My itinerary was too ambitious. I knew that even before we left. Three days simply wasn’t enough to see all the many, many must-see sights and attractions of Paris, or acquire all the many delightful and oh-so-French items on my shopping list.
But I made the list just the same. A little aspiration never hurt anybody, oui?
Those shopping aspirations included perfume, macarons, chocolate, lingerie, fabric and craft items and, if possible, six grandchild-sized berets in assorted colors. I hoped to visit at least three shops in each category so I could share my discoveries with you.
Though I quickly decided to save my perfume purchase for the duty free shop just before my flight home and jettisoned lingerie shopping entirely, I did make progress in most of the other categories. Visiting three shops apiece was a pipe dream but I’ll have a nice Paris shopping and window shopping roundup for you in a future post.
There was, however, one category in which I simply would not and could not skimp. Fabric, fiber, and crafts are always a first priority for me (because, after all, crafting is the secret to a happy life). And so it was with a great deal of excitement that I left The Chairman to rest in our hotel (experience has taught me that husbands are best left behind on these occasions) and headed off to explore the crafty wonders of belle Paris.
For sewists who enjoy making their own clothing, Paris has an actual fabric district located in the 18thArrondissement. This post from Seamwork.com offers an extensive list of fabric shops in that area. The fabrics one can find there are reported to be very fine and the shops carrying them numerous. I hope to visit the area on a future trip but as my time was limited and I lacked a car, I stuck to the 2ndArrondissement and shops that were within a 30-minute walk to my hotel.
(ProTip: While in Paris, walk as much as possible. I averaged 8 miles a day, which allowed for guilt-free indulgence in macarons and patisserie.)
My first stop was Toto, a chain with locations all over Paris. This no-nonsense, serviceable spot offers a good variety of affordably priced fabrics – everything from upholstery fabric to dress goods. It’s as much a variety store as fabric store; a wide selection of bedspreads, towels, and inexpensive curtains were also available.
Toto reminded me of the old Woolworth’s stores of my youth; a pleasant jumble of goods that invite bargain hunters to search for hidden treasures. The treasures are certainly there! I was particularly intrigued by the scrap bin offering fabric by the kilo. I also found some pretty, open weave, flax colored fabric with red embroidery – perfect for table runners or placemats – that was very tempting. However, with limited suitcase space in mind, I reluctantly passed on both and headed off to see what the rest of the 2ndArrondissement had to offer.
The display windows of Maison Sajou, 47 rue du Caire, made me clap my hands with eager, childlike delight. The windows, as well as the exterior of the building itself, are alive with bright, carnival colors that hint of the wonders inside and draw you to the door in breathless anticipation. My pre-Paris research moved Maison Sajou at the top of my list and it more than lived up to its reputation. If you’ve only got time for one crafty destination in Paris, get thee to Maison Sajou.
You’ll find a little bit of everything within the confines of this small, artfully arranged shop – fabric, yarn, trim, buttons, sewing notions – but the emphasis is on fine, oh-so-French hand embroidery and perfectly exquisite threads in every shade imaginable. What better souvenir of your trip to Paris could there be than an Eiffel Tower embroidery sampler to stitch over the next few months, recalling the pleasures of your visit to belle France?
There was so much to see in these few square meters and I wanted it all. But suitcase and budget limitations forced me to choose carefully. In the end, I bought a lovely pattern for floral embroidery sampler, some beautiful lace and ribbons, some souvenir boxes of various pins and needles to give as gifts (perhaps to myself?), and several cuts of beautiful fabric in colors and patterns that were as French as can be.
It all added up very quickly – it’s easy to spend a lot in a short time at Maison Sajou – so I only purchased one meter total of three different fabrics, but I’m sure I can use these as focus fabric in a future quilt and augment them with yardage from my stash at home.
My last stop, Lil’ Weasel was only a short walk from Maison Sajou. It’s located at 1-4 Passage du Grand, a small, cheery shopping promenade between Place Goldman and Rue Saint-Denis. Lil’ Weasel is actually composed of two shops located opposite one another on the passage. Once again, you’ll find a little bit of a lot of things inside but if you’re a yarn enthusiast, Lil’ Weasel should be a must-stop part of your Paris itinerary.
The staff was very helpful and spoke English when I apologetically explained my lack of French (this was true in all three shops). There was a wide variety of price points on yarn, from affordable to splurge, but all of it was lovely. If I’d come with a particular project in mind, I could easily have bought a lot more but in the end I settled for some small, 62 meter skeins of soft cotton yarns in a rainbow of pinks and purples. At just 1.5 Euros each they were a good buy and will knit up into some fun, as-yet-undetermined girly gifts for my granddaughters.
Other tempting items at Lil’ Weasel included a large and varied selection of buttons, colorful and whimsical ones to adorn baby or children’s garments as well as unique, artisan quality buttons to give an elegant finish to adult sweaters. The smaller of the two shops offers a carefully curated selection of beautiful dress fabrics, including a variety of cotton lawn Liberty of London prints. I came very close to purchasing a couple of yards for myself but decided to wait until the London portion of our journey. (It just seems like Liberty of London should be cheaper IN London, right?)
With a little more time, money, and luggage, there’s no doubt that I could have found many more spots to indulge my fiber fantasies during my far too brief sojourn in France. But, all things considered, I feel like I experienced a good sampling of the best of Paris.
And the best part of it all is that now I’ve got an excuse to return. And I plan on doing so as soon as possible.
Paris, I’ve discovered, is a lot like fabric. Once you’ve developed an appetite for it, you simply can’t help yourself from wanting more!

Broccoli Salad, Made Healthy
I’m sure those moms were the ones who came up with the classic preparation of broccoli salad, the delicious concoction that is a staple of deli counters and picnic tables everywhere. And I’m clearly on a kick with summer salads lately. Have you see the watermelon feta or the vegetable quinoa salad or the tomato couscous? I think I might have a problem…but that’s a topic for a different post.
Back to Broccoli
Well, I hate to be the bearer of bad news but our mother’s and grandmother’s broccoli salad is the farthest thing from healthy. In fact, with a cup of nuts, a cup of mayo, and dried cranberries loaded with sugar, the classic preparation clocks in at 17 Weight Watchers points!
Nope, I’m not making that up. A cup of regular mayonnaise is worth 53 WW points alone. But there are plenty of other high point ingredients in the classic broccoli salad we’ve all been kidding ourselves in to counting as health food.
18 points! For broccoli? Thanks, but no thanks.
If I’m going to spend 18 points on something, it’s going to be pie!
Still, I really do enjoy broccoli salad. It’s delicious as a side dish and very versatile, pairs beautifully with chicken, beef, or pork. I also like it all by itself for a quick lunch. But…18 points! Does that mean I should never eat broccoli salad again?
Not at all. With a little ingenuity and a few healthy ingredient substations, there’s always a way! My lightened up version of the classic salad is full of flavor and very close to the original, but will only cost you 5 WW points! (Maybe you’ve even saved room for a bite of that pie!)

Broccoli Salad, Made Healthy

Description
This isn’t your grandmother’s broccoli salad. With a few easy changes the unhealthy recipe she passed down to you becomes fresh and new while still tasting as yummy!
Ingredients
6 cups broccoli florets, cut to bite sized
6 pieces of bacon, cooked crisp and drained
1/2 red onion, diced
1/3 cup sunflower seeds
1/2 cup reduced sugar Crasins (dried cranberries)
1 cup non-fat, plain Greek yogurt
2 T white wine vinegar
1 T white sugar
Instructions
1 – Start by cooking the bacon. The best way to cook bacon is in the oven. I know, it sounds crazy. But it’s cleaner and you get a more even cook.
It’s simple. Heat oven to 400 degrees, line a baking sheet with aluminum foil and lay out bacon in strips, not overlapping or touching.
Cook 15-20 minutes, depending on your oven. Voila!
Let the bacon cool, and dice.
2 – Combine diced bacon, red onion, sunflower seeds, chopped broccoli and Crasins in large bowl.
3 – In separate bowl, place yogurt. You might consider straining the yogurt, the thicker the better. Whisk together with vinegar and sugar.
4 – Pour the yogurt glaze into the large bowl. I recommend chilling the salad for 30-60 minutes before serving, but it’s not required.

Quinoa Salad: A Summer’s Bounty Of Vegetables
There’s an old joke about August being the month when folks who live in the country lock their cars when they go to church to prevent people from leaving zucchini on seats.
Where I’m living, it’s actually not a joke. The vegetables are coming on hard and fast right now and the harvest is almost too bountiful.
When I went to pick up my farm share at the market a few days before I left for my trip to Europe, Sarahlee, the adorable organic farmer, ordered me to go back to my car for a second bag. She had bin after bin of additional vegetables that CSA members could have for free and urged me to take as much as I could possibly use. I didn’t want to see those beautiful eggplants, zucchini, tomatoes, or cucumbers go to waste so I filled my bag to the brim. My refrigerator was stuffed!
Then, of course, I needed to figure out what to do with all that bounty.
Step one – invite people over for dinner.
Step two – come up with a delicious veggie-centered recipe, like my Summer’s Bounty Quinoa Salad.
Step three – use any of the leftover farmstead fruits and veggies to make delicious food you can enjoy all year, like my no peel tomato sauce recipe with fresh tomatoes, or my homemade raspberry jam.

What Do You Have In Stock?
I really just started with whatever I had on hand, the vegetables and then some pantry and refrigerator staples (and you know how I am dedicated to keep my pantry prepared for anything!). But my-oh-my, what a happy agricultural alchemy came out of it! This Summer’s Bounty Quinoa Salad tastes like anything but potluck!
True confession time. I experiment with a lot of my own recipes; way more than I share on the blog. Why is that? Because if the experiment isn’t a success, I keep the results to myself.
But the Summer Bounty Quinoa Salad turned out so well that I saved it for this week while I’m traveling when I wasn’t planning to blog. This hearty and healthy salad works great as a side dish. But it’s also satisfying enough to serve as a main course and makes 6 to 8 generously-sized main dish portions. For the quinoa salad:
2 uncooked cups quinoa (You’ll cook it according to the package directions)

3 large tomatoes, cut into chunks
2 T olive oil
Salt
Pepper
2 medium cucumbers, peeled and diced
10 cherry (or small) tomatoes, quartered
12 Spanish olives, sliced
1 cup grated parmesan cheese
For the vinaigrette:
1/2 cup olive oil
1/2 cup red wine vinegar
1 T lemon juice
1 T dijon
2 T fresh basil, chopped
1 T capers
Salt
Pepper
Crushed red pepper flakes (optional)
Instructions
Preheat oven to 425.
Place chopped onion, eggplant, and large tomato chunks onto a rimmed baking pan. Drizzle olive oil over vegetables and mix with large spoon to coat with oil. Add salt and pepper to taste, mix again. Place vegetables in oven and allow to roast until well cooked, about 15 minutes, stirring occasionally. Remove from oven and allow to cool.
While vegetables are roasting, cook the quinoa according to the package directions. After cooking, fluff with fork and place into large salad bowl to cool.
Make the vinaigrette. Whisk olive oil, vinegar, lemon juice, and mustard together in a bowl. Add salt, pepper, and crushed red pepper flakes to taste. Stir in capers and basil.
Top cooked, cooled quinoa with roasted vegetables, raw cucumbers, fresh tomatoes, and sliced olives. Pour vinaigrette over. Toss to mix thoroughly and put salad in refrigerator until ready to serve. If desired, sprinkle parmesan cheese over the salad just before serving.
