Easy Peasy Vegan Menu Plan for Crazy Busy Weeks!
Some weeks just seem a little out of my grasp. Even when my fridge is bursting with fresh veggies I can be too tired or too busy to really cook an involved meal. I know this happens to some of you too.
You are going to be surprised at how little time it takes to make the seitan ribs and the vegan skillet meal comes together super fast.
Some of these recipes use air fryers, but you can bake them in the oven if you don’t have one yet. With the Instant Pot dishes you can cook on the stove-top,...

Vegan Kale-Stem Creamy Sauce
I love spring and my CSA embodied it this week. There were strawberries, asparagus, greenhouse tomatoes, collards, red kale, and green kale. I’m in veggie heaven!
The more greens you eat, the more stems you have left over. I know some of you cook the stems and eat them with the leaves, and I commend you. In my household I take out the stems whenever I’m sautéing because Cheryl will pick them out.
Instead of throwing them out or composting them I’ve been using them in sauces and pesto too. I...

Instant Pot Vegan Curried Spring Vegetable Potato Chaat
Take those spring veggies in your CSA box and turn them into something spectacular! For this Instant Pot Vegan Curried Spring Vegetable Potato Chaat, we cook the veggie curry in the Instant Pot while the potatoes cook in the oven.
This is another post in my series of recipes sponsored by the Idaho Potato Commission. You can never have too many recipes for potatoes and this is one that will really impress your guests.
You could also partially cook the potatoes in your Instant Pot and finish t...

Heirloom Bean: San Franciscano Beans (Slow Cooker or Instant Pot)
Today’s recipe is simple and delicious! I’ve been hoarding Rancho Gordo heirloom beans from being in their bean club the past year. There are instructions on how to cook them in your slow cooker or Instant Pot, but you could certainly cook them stove-top as well.
What are heirloom beans? Like heirloom tomatoes they are varieties that have fallen out of favor because they weren’t as easy to grow or didn’t ship well. That’s how we got those flavorless tomatoes we see in the grocery all year ro...

Make Your Own Banana Flax Vegan Dog Biscuits
When the weather is icky, you’re not the only one to get bored. Perk up your pups by making them some of these vegan dog biscuits. Who knows, you might even be able to teach them a few new tricks.
Making dog cookies is pretty much like making people cookies. You use the best ingredients that you have in your kitchen, mix everything up together and bake them.
The only thing you need to keep in mind is – cook dog cookies drier, that way they’ll store longer.
My pups love banana and cinnamon....

Vegan Slow Cooker Potato and Bean Mole
Welcome to another sponsored post for the Idaho Potato Commission. I love working with them because they are great people, and I get to cook with potatoes. That’s a win-win every time! I have a super-flavorful recipe for a Vegan Slow Cooker Potato and Bean Mole for you just in time for the weekend.
If you haven’t made mole before, you might be a little intimidated, but it’s so much easier than you think it is. You will need to find dried chili peppers. Many regular grocery stores will have p...

Vegan Hazelnut Mocha Coconut Latte or Frappuccino
I always get fomo (fear of missing out) when I see the new drinks at Starbucks. Some of them aren’t even vegan, but I love the idea of incorporating new flavors into my favorite foods and drinks. When I saw the Hazelnut Mocha Coconut milk Latte I knew I need to recreate it at home.
I’ve been weaning myself off caffeine the past few months. Some mornings I’ll have a matcha latte or a half-caf coffee, but more mornings I’m having a cold-brewed coffee substitute like Teeccino or other grain-bas...

Vegan Instant Pot Dirty Rice and Stove-top Smoky Red Beans
These recipes are so simple to prepare. If you don’t have an Instant Pot you can make the rice on the stove-top too, so don’t fret. I like making the Stove-top Smoky Red Beans while the Vegan Instant Pot Dirty Rice is cooking. Plus this works perfectly if you just have one Instant Pot.
Please note: This post is sponsored by Harris Teeter. All the opinions and the recipes are mine and I hope you enjoy it.
You may not know that Harris Teeter has developed Harris Teeter Organics to give you aff...

Air Fryer Sesame, Ginger and Garlic Edamame
One of the things I love about my air fryer is that it is so versatile. Sure, it makes the best crispy tofu and soy curls, crunchy blow tie chips, and even French fry Po’ boys. But it turns corn on the cob into something out of this world, roasts veggies to perfection, and makes restaurant worthy Air Fryer Sesame, Ginger and Garlic Edamame.
If you don’t have an air fryer yet check out my post about different air fryers and their accessories here. If you’re looking for an XL one, I’m really l...

Vegan Air Fryer Southern Fried “Chicken” Soy Curls
I hate to tell you this, but I’ve been holding out on you. I’ve been making these Vegan Air Fryer Southern Fried “Chicken” Soy Curls for months! It’s taken me awhile to get the time to take photos and actually write down the recipe, but it’s worth the wait.
What are soy curls? They just have one ingredient: Whole Non-GMO soybeans. The are sold in stores near the west coast. Since I’m in North Carolina, I order my Butler Soy Curls on Amazon.
Soy curls look a lot like TVP and come dehydrated....
