Slow Cooker Whole Wheat Spelt Potato Rolls
I’m ready for soup season. There’s nothing that says fall like a big bowl of lentil soup or vegan tomato soup. But my favorite thing is the homemade rolls I serve on the side. This recipe for Slow Cooker Whole Wheat Spelt Potato Rolls is so easy to make you’ll find yourself making them all the time.
If you’re gluten-free be sure to check out my Teff Oat Rolls.
This is another post in my series of recipes sponsored by the Idaho Potato Commission. The mashed potato and the starchy potato water...

Creamy Vegan Greens and a Food Safety Lesson
Now that Thanksgiving is over, we pretty much eat ourselves silly until the New Year. Of course, we can choose foods that make us feel better instead of opting for instant gratification and a sugar hangover. My Creamy Vegan Greens are healthy and taste decadent all at the same time. Take them along to any of the holiday parties you are attending to share the health with all your friends. Also keep them in mind for your New Year’s Day feast!

Vegan Whole Wheat Pumpkin Bread Minis
I served these Vegan Whole Wheat Pumpkin Bread Minis as part of a trio of desserts at my Halloween party, along with my Mini Treacle Tarts, and Jenni Field’s Vegan Treacle Tart Ice Cream.
But these little cakes are for more than Halloween. They would be at home at your Thanksgiving dessert buffet, a Magical Creatures party, or just with a nice cup of hot chocolate while you sit in front of the fire.
I love pumpkin and encourage you to stock up on cans of organic pumpkin while they are plenti...

This is also a great Tday recipe to bring with you if you’re going to someone else’s house for the holiday. It’s something non-vegans will enjoy and that way you will have something other than sides to eat.

Gluten-free Apple Teff Pancakes with Homemade Date Caramel Syrup
This has been a difficult fall this year. First, it just took too long to get here, my oldest cat, Irma, passed away at almost 20 years old, plus I threw my back out for the first time ever.
I think that part of the solution for me is to get back into a healthy routine. First up for me is to be thankful for the wonderful things that are just waiting to be noticed. Breakfast is a great place to start treating yourself well. These Gluten-free Apple Teff Pancakes with Homemade Date Caramel Syr...

I love fresh figs and have planting a fig tree on my to do list for next year. When I saw this Quick Balsamic Fig Shrub recipe in Warren Bobrow’s latest book, Bitters & Shrub Syrup Cocktails, I knew I had to share it with you!
While I was on my Oregon vacation I got to visit with my friend Gail Davis, of Hungry Vegan, in Eugene. She took me to the farmers market and it is out of this world!
