Vegan Slow Cooker Menu Plan for 2

Vegan Slow Cooker Menu Plan for Two People Households

This week’s vegan menu plan uses you 1 1/2 to 2-quart slow cooker to make just enough food for two. Many of the recipes come straight from my book, Vegan Slow Cooking for Two or Just You, so if you like these you’ll find more like them in the book.

Vegan Torchy’s Queso Copycat Made with Potato and Homemade Rojo Sauce!

Vegan Torchy's Queso Copycat Made with Potato and Homemade Rojo Sauce!

A couple of years ago, I spent a week in Austin and got to eat some amazing tacos at Torchy’s, which is one of the many taco darlings there. I wasn’t able to try the queso because it was full of dairy, but some of my friends got some and it looked stunning. My Vegan Torchy’s Queso Copycat is made with Idaho Potatoes as the base of the cheese along with an easy-to-make homemade rojo sauce.

This is another in my series of posts sponsored by the Idaho Potato Commission. I love potatoes and they...

Vegan Crab Dip Made with Jackfruit

Vegan Crab Dip

Great Vegan BBQ without a Grill is full of recipes for plant-based hearty foods, including ribs, burgers, and even steaks! But there are things on sticks, lots of sides, and cool appetizers like this Vegan Crab Dip made with jackfruit.

I’ve been getting more obsessed with jackfruit lately and have been using it in recipes that call for shredded chicken like veganizing a Tom Yum Soup. I hadn’t thought about using it in place of crab until I saw Linda and Alex...

Easy Air Fryer Seitan Vegan Riblets

I love making seitan in my air fryer. It’s a different texture than steamed and is perfect for these double baked Easy Air Fryer Seitan Vegan Riblets from my book, Vegan Cooking in Your Air Fryer.

First you mix the seitan together in your food processor, then you press it into a shape and size that fits into your air fryer. Cut it in half so it will cook faster.

Then cook those pieces in your air fryer until they get puffy. And believe me, they are gonna to puff up more than you can imagine...

Vegan Warm Horchata with Whole Grains and Almonds

This weekend we needed a hot drink to warm us up after playing in the snow. I wasn’t in the mood for chocolate, so cocoa was out. But I had all the ingredients for a Warm Horchata.

But Isn’t Horchata a Cold Drink?

I have an oatchata recipe that I make in the summer and this Warm Horchata  is made very similarly. It’s refreshing cold, but it’s so amazing warm too.

What is Horchata?

All horchata is spiced up with cinnamon and has a base of homemade rice and almond milk. I add in some oats...

Italian Slow Cooker Cranberry Bean Soup with Greens

Italian Slow Cooker Cranberry Bean Soup with Greens

In my ideal world, I’d eat soup every single day. In fact, I have soup pretty often during the week for lunch. Cheryl isn’t a huge soup person, but even she feels satisfied after a bowl of this Slow Cooker Cranberry Bean Soup.

I used veggies I had on hand already: sweet potatoes, celery, onion, and carrots. You can change these with what you have in your fridge and pantry. I was lazy and did not cook the onion first!

You are welcome to saute them first or use some from the freezer that you s...

Vegan Slow Cooker Lentil Vegetable Soup

Vegan Instant Pot Lentil Vegetable Soup with Slow Cooker Variation

For this warming Vegan Slow Cooker Lentil Vegetable Soup I used a lentil blend that’s often called autumn blend. The multi-colors of the different type of lentils attracted me to them.

The yellow split peas and red lentils “melt” into the soup as they cook down. It’s what makes this soup so creamy. That’s the real reason to use this blend.

The mixed lentils don’t keep the beautiful colors they have before you cook them. That’s why you can use your own combination of lentils depending on what...
