Vegan Torchy’s Queso Copycat Made with Potato and Homemade Rojo Sauce!
A couple of years ago, I spent a week in Austin and got to eat some amazing tacos at Torchy’s, which is one of the many taco darlings there. I wasn’t able to try the queso because it was full of dairy, but some of my friends got some and it looked stunning. Easy Air Fryer Seitan Vegan Riblets
I love making seitan in my air fryer. It’s a different texture than steamed and is perfect for these double baked Easy Air Fryer Seitan Vegan Riblets from my book, Vegan Cooking in Your Air Fryer.
First you mix the seitan together in your food processor, then you press it into a shape and size that fits into your air fryer. Cut it in half so it will cook faster.
Then cook those pieces in your air fryer until they get puffy. And believe me, they are gonna to puff up more than you can imagine...

Vegan Warm Horchata with Whole Grains and Almonds
This weekend we needed a hot drink to warm us up after playing in the snow. I wasn’t in the mood for chocolate, so cocoa was out. But I had all the ingredients for a Warm Horchata.

Italian Slow Cooker Cranberry Bean Soup with Greens
In my ideal world, I’d eat soup every single day. In fact, I have soup pretty often during the week for lunch. Cheryl isn’t a huge soup person, but even she feels satisfied after a bowl of this Slow Cooker Cranberry Bean Soup.

Vegan Slow Cooker Lentil Vegetable Soup
For this warming Vegan Slow Cooker Lentil Vegetable Soup I used a lentil blend that’s often called autumn blend. The multi-colors of the different type of lentils attracted me to them.
The yellow split peas and red lentils “melt” into the soup as they cook down. It’s what makes this soup so creamy. That’s the real reason to use this blend.
