Slow Cooker Vegan Cincinnati Chili

Wacky Vegan Cincinnati Chili from Vegan Slow Cooking for Two

Photo by Kate Lewis, Copyrighted by Fair Winds Press

My Slow Cooker Vegan Cincinnati Chili is similar to a regular meaty chili except it has unusual spices that you see more in pumpkin pie than an all-American stew. Traditionally it’s a meat chili that has kidney beans as an optional topping as well as shredded cheese and onions – then oddly enough, it’s served over pasta.

This one uses vegan ground and the lentils for the meaty texture. Don’t worry, there’s a gluten-free and a soy-free optio...

Joni Newman’s Indian Spiced Chili

Fusion Food in the Vegan Kitchen, pulls together wonderful combinations of at least two cultures in each recipe. It was supposed to snow here today and it’s a little dreary – this  Indian Spiced Chili will definitely brighten my evening!

Jackfruit is a wonderful vegan addition. Once cooked it turns into something that looks like shredded meat making it perfect in chili or bbq.

The jackfruit we use is young jackfruit in brine that you can buy in cans at an Asian market or...

Mango Curry Tofu

Mango Curry Tofu from Vegan Richa's Indian Kitchen | Healthy Slow Cooking

You know I love Indian food. It was so exciting to get my friend’s new cookbook – Vegan Richa’s Indian Kitchen – in my hands. In this post, I’m sharing her recipe for Mango Curry Tofu.

Vegan Richa's Indian Kitchen | Healthy Slow Cooking

There are 10 chapters in Vegan Richa’s Indian Kitchen. The first one goes over the basics of Indian cooking and shows you around the most used spices and ingredients.

Then the recipes are broken up into breakfast, small plates, dry curries, dals, one-pot meals, main dishes, flatbreads, de...

Don’t have yellow eyed beans in your pantry? You can use black-eyed peas, pintos or another heirloom bean you’ve been saving.

I fell in love with yellow eyed beans the first...

Chickpea Noodle Soup with Spiralized Celeriac

Chickpea Noodle Soup with Spiralized Celeriac Chickpea Noodle Soup with Spiralized Celeriac Will Hit the Spot!

My Chickpea Noodle Soup actually has no real noodles in it at all. Instead, it’s overflowing with noodle-thin strands of celery root and carrot. I think that alone makes this an over-achieving veggie soup.

If you have a spiralizer, this recipe is a great excuse to get it out. If you can’t find affordable celeriac, you could do carrot or zucchini noodles instead.

Chickpea Noodle Soup with Spiralized Celeriac

What is celeriac?

It’s sometimes called celery root, but it’s not...
