6 cups pineapple juice
4 pints lemon sherbet
24 ice cubes
1 teaspoon coconut extract

In a blender, combine pineapple juice, sherbet, ice and extract in batches; cover and process until smooth. Pour into chilled glasses. Yield: 3 quarts

Lemon Pound Cake Muffins

Here is a great recipe for a relaxing summer brunch. Enjoy.

1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda 1 tablespoon poppy seeds
1/2 cup sour cream

Drive into the Flint Hills

Every time I have the chance to visit the Flint Hills, I try to turn off on a side road to take some pictures. On my latest trip to Chase County, I managed to get some beautiful shots of the wild flowers. Enjoy!

Flint Hills Rodeo Book Launch

Here are some pictures from my book launch last weekend at the Flint Hills Rodeo in Strong City, KS. I can't imagine a better way to start off my book promotion than in the Flint Hills.
