ACFW Conference - Highlights from the Past

6 cups pineapple juice
4 pints lemon sherbet
24 ice cubes
1 teaspoon coconut extract
In a blender, combine pineapple juice, sherbet, ice and extract in batches; cover and process until smooth. Pour into chilled glasses. Yield: 3 quarts

Lemon Pound Cake Muffins
Here is a great recipe for a relaxing summer brunch. Enjoy.
1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda 1 tablespoon poppy seeds
1/2 cup sour cream
Glaze: 1 cups confectioner's sugar
2 tablespoons lemon juice

Every time I have the chance to visit the Flint Hills, I try to turn off on a side road to take some pictures.

Flint Hills Rodeo Book Launch
Here are some pictures from my book launch last weekend at the Flint Hills Rodeo in Strong City, KS. I can't imagine a better way to start off my book promotion than in the Flint Hills.
