Turkey Taco Skillet by The Pioneer Woman
There’s nothing complicated about this super-quick, super-easy dinner! It’s for those days when you’ve been shuttling kids, washing mud off the dogs (what’s the point, anyway?), working on projects, and just trying to keep your head on straight. I’ve never, ever made this for dinner and not watched it completely disappear. It’s just a big, yummy taco explosion without the need for assembly!
Here’s how to make it.
First, char some corn tortillas! I use the stovetop burner over medium heat…
Then, when the edges are just starting to barely blacken (alliteration alert!)…
Flip it over to do the other side.
Keep going until they’re all done, then set them aside while you get going on everything else.
In a skillet over medium high heat, add the ground turkey along with the chili powder, cumin, salt, and pepper.
Stir it around, breaking up the meat, until it’s all browned. You’d never know this wasn’t ground beef at this point!
Please don’t tell my husband, his brother, their father, or any cattle rancher alive that I said that.
Add a can of drained, rinsed black beans…
A cup of salsa (not pictured because I’m an airhead and forgot it) and a chopped chipotle pepper (along with a little extra adobo sauce from the can) and stir it all together.
And this is where the fun happens! Tear up the charred tortillas and throw them into the skillet.
Stir them in and watch them become a lovely, corny (flavor-wise, not bad joke wise) part of this one-skillet equation.
When they’re all stirred in, turn off the heat and start adding the fixins: Chopped tomato (or pico de gallo if you have it)…
Chopped avocado, sliced radishes (love this addition!) and crumbed queso fresco or cotija cheese.
And OF COURSE, a pile of cilantro leaves.
Oh! And sour cream. Ya gotta have it.
To serve, just spoon it onto plates and dig right in!
Hope you love this. It’s really tasty and oh, so good.

Thank You…and Here’s a Dinner Idea! by The Pioneer Woman
First things first! Thank you so very much for your incredible input/suggestions for my cookbook title last week. Seeing the results of the poll (which contained some recent contenders) was more helpful than you know, but so were all of your extra title suggestions. It has taken me this long to say “thank you” because it has actually taken me this long to (almost…still have a ways to go) get through all your comments. Wow. I have a legal pad with suggestions scribbled all over the place! Will keep you posted once I nail down the title. You’re all wonderful, not to mention creative. Thank you so much!
Next, I wanted to give you a super delicious, but super simple, idea for dinner tonight! It’s Honey Soy Salmon, and I posted it here a year ago. I’ve made it a few times since, and am always blown away by how scrumptious and easy it is.

Help Name My New Cookbook! by Ree
Hello, friends, Romans, and countrymen!
(But mostly friends.)
I have missed posting here on The Pioneer Woman Cooks so, so much.
Most of you know that I was inundated last fall with the opening of The Mercantile, our store and restaurant in our hometown. It was more all-encompassing than any project I’ve ever been involved in, and it left zero time for photographing recipes for my blog. So much fun, but wowzers.
Most of you also know that we had a very difficult January in our house, which put a little bit of a damper on creating and sharing. (Thank you again for your kindness during that time. It meant a lot to my family and me.)
What you might not know is that I have also been working continuously on my new cookbook, which will be out this fall! As you have probably gleaned through the years, when I work on a new cookbook, I really go all in because I’m a middle child and I want each cookbook to be 100% worth it for the folks that choose to buy it! So combined with The Merc, the family things, and making sure my kids and husband are loved and fed, it has left little time to post here. I’m eager to get through the busy time so I can get back to normal! Posting recipes on my website is something I love doing, and I will definitely resume very shortly.
Meanwhile, here’s something you might find funny. And when I say funny, I don’t mean haha, slap-your-knee funny. I mean I’m getting read to shoot my cookbook cover and then the cover design will happen, and this isn’t funny anymore funny. Here goes.
I absolutely, positively can not decide on a title for my new cookbook.
I have had a working title, but I can’t commit to it because I just want the title to be right.
So because you’ve been with me through thick and thin…
Because I have no distance from it anymore…
Because you have probably had your second cup of coffee and I haven’t…
And because I trust you…
Will you please help me figure it out? Because I think it would be weird if my new cookbook came out this fall and didn’t have a title. I would say things like, “Exciting news! My new cookbook is out! I hope you’re able to check it out, but I really can’t tell you how to find it because it doesn’t have a title. So just look for the lady with the red hair on the cover. She’ll probably be wearing a blouse with flowers on it.”
What the Cookbook is About
To give you some context: the cookbook is all about taking it easy on yourself when it comes to cooking, and is geared for those of us (most of us!) who don’t have two hours (or sometimes, even one hour!) to cook a meal. Recipes include sheet pan suppers, slowcooker soups, make ahead meal kits, lunches on the go, clever breakfast ideas, super snappy appetizers, and more fun stuff.
I wanted to call it “Take it Easy” because I love The Eagles and I miss Glenn Frey…but that title has already been used. Ha.
Sometimes I want to call it “Good Stuff, Maynard…” but I think that pop culture reference would be lost on some. Again: Ha.
Help me, Obi Wan Kenobi! You’re my only hope. Thank you so much for weighing in, and if you don’t like any of the following options, feel free to jot down your own in the comments! If I wind up using your idea, I will send you cookbooks and other fun stuff.

Super Bowl Food! by Ree
The Super Bowl is this Sunday, and man oh man…I can not wait. Part of this is because I love a good football game…and part of it is that I love Super Bowl food.

To make it easy, though, I’m listing some of my very favorites here. I link to some of these every year…but that’s ’cause they’re so darn good.
Queso Fundido! Absolutely to die for, and very pretty, too.
Dark Chocolate Brownies. Rich, chocoholic-pleasing brownie that require a glass of milk!
And speaking of brownies…holy moly. These Knock You Naked Brownies are all that. If you ain’t tried them…you ain’t lived.
If you’re needing to feed a crowd, this Spicy Dr Pepper Pulled Pork is ridiculously perfect. Sweet, spicy, and superb.
If you make the shredded pork, you can also whip up an easy cilantro slaw and make these luscious sandwiches. Just lay out the pork, the slaw, and buns and let everyone serve themselves!
You could also make the cilantro slaw, but go the Barbecue Chicken Sandwich route instead. I want to marry these.
If you’re looking for a throwback to the early eighties, this Mexican Layer Dip is a retro fave.
If you’re needing good ol’ chips and salsa, look no further than this Restaurant Style Salsa, a longtime favorite recipe on this website. Turns out perfect every single time.
Sloppy Joes are also a good choice for serving a crowd. Make up a big pot, throw some buns in a basket, and tell your football guests to dive in.
I have several slider recipes on my site, but these Spicy Whiskey BBQ Sliders are probably my faves. Saucy, spicy, and wonderful.
Grilled Corn Guacamole, which will make you cry from bliss while you’re watching Super Bowl commercials.
Peanut Butter Sheet Cake with Chocolate Icing. OH MY WORD.
Chipotle Chicken Chili. Beyond hearty, beyond scrumptious.
Pizza Potato Skins. Everything you love about Potato Skins, but with a pizza edge.
Oooooh. I’ll take this Spinach Artichoke Dip! It’s ta die fer.

Kale Yes! by Ree
You’ll never guess what happened. Yesterday I went to the grocery store after church because I had this wicked kale recipe in mind for a new blog post here on The Pioneer Woman Cooks, because I was all ready to kick off the new year with a brand new recipe! But when I got to the grocery store, there was no kale anywhere. Now, one might ascribe this to the fact that it is a small town grocery store and we don’t have things like kale in small towns…but that isn’t the case! It carries kale regularly, much to my kale-loving delight. Unfortunately, the other residents of Pawhuska must have woken up with a hankering for kale as I did, so I was out of luck.
So instead of posting my new kale recipe, I have no choice but to list some of my favorite kale recipes from the website through the years. These are favorites of mine! And if you think you don’t like kale…well, it’s time to turn over a new leaf.
(Get it? Ha.)
Killer Kale Salad. Like a really decadent spinach salad, but with the crispness of kale. Dreamy!
Chicken Kale Pasta. Chicken…tomatoes…kale…and noodles, of course! This is one of the best skillet pastas there is!
Butternut Squash and Kale. If I could eat anything right this minute, it would be this beautiful veggie dish. Yum!
Sausage, Potato, and Kale Soup. So tasty, so dreamy! Perfect for January.
Kale Pasta Salad. Toasted pine nuts make this one extra yummy. I like to add big shavings of Parmesan, because I’m naughty like that.
And finally, my all-time favorite kale dish in the universe: Kale Citrus Salad. I love it beyond measure, and I want to spend the rest of my life with it. It completes me.

Three Christmas Favorites by Ree
Hello, friends! Well, it’s been a mammoth fall (and winter!) so far. While I’ve done my share of cooking, I haven’t been photographing and sharing recipes because of football, volleyball, Mercantile, filming, and other things that have defined the past three months of my life. Once we get past Christmas, my world will open up a bit and I’m really looking forward to spending the rest of the holiday season cooking, photographing, and getting sticking stuff all over my camera. Just like the good ol’ days!
Meantime, I wanted to share three of my very, very favorite Christmastime goodies. If you haven’t made these…ya gotta!
Prune Cake. Forget the word “Prune.” Just make this and you’ll understand the magic!
Chex Party Mix. I know what you’re thinking. You can buy it in the bag. Or you can follow the recipe on the box. Yes, you can. Or you can try this version, which is pretty much the basic recipe with just two magical ingredients added. They will change your life.
Caramel Apple Sweet Rolls. A variation of the cinnamon rolls I make every year, these have caramel apples inside and a caramel frosting. They are heaven.
