Home on the Grange: Tasty Treat

May 27-Dream Cake

I have no idea if the Grange Dream Cake looks like this Scandinavian Dream Cake, but the recipe looked somewhat similar. I think the “cake” part of the Grange recipe is  more cookie like.


I found somewhere a 1950 Pennsylvania State Grange Cookbook and the recipes are often a hoot, from odd ingredients to instructions like “put in hot oven.” Here’s a fun one for a Friday of a holiday weekend:


Dream Cake

1/2 cup butter, 1 cup cake flour, 2 tablespoons confectioners sugar. Cream all ingredients thoroughly and spread evenly in a greased 8x8x2 pan. Bake in moderate oven (350°) 30 minutes.


2 eggs, 1¼ cups brown sugar, 2 tablespoons flour, ¼teaspoon salt, 1½ teaspoons baking powder, 1 cup nuts, 1 cup cocoanut.*


Beat eggs until thick and lemon colored. Add sifted dry ingredients, then nut meats and cocoanut. Spread evenly on first mixture. Bake in moderate oven an additional 30 minutes. Cool in pan and cut in squares.


*This is spelled per the recipe.

Memorial Day ‘Tasty’ Treat

RecipeWith the picnic-friendly holiday like Memorial Day, here is a recipe that I found in a Let’s Eat Outdoors pamphlet (from the late 1950s/early 1960s — I think). The recipes are from a range of food companies but, of course, I couldn’t resist the Spam recipes. So how about some Spam-aroni!


SPAM-ARONI PICNIC SALAD


Combine 3 cups chilled cooked macaroni, 1 can Spam, cubed, 1/2 lb. American or Cheddar cheese, cubed, 1 cup chopped celery, 2 tbsp. minced onion. Toss together with dairy sour cream. 6 to 8 servings.

More cake for Heidi at Book Talk and Signing at the Guthrie Memorial Library-Hanover’s Public Library.

When I got cake last year for release of my first book, I knew it would be a year of firsts!
