I like this quote because it gives an example of the type of conversations they have. While eating the fruits, they discuss the usual conflict of new priests and how they disapprove of the whole system.

The concept of white shirts and different colors were already introduced in the first multiple chapters. This is possibly a reference to the political aspect of Thailand, which clearly shows that Bacigalupi knows the intricate details of Thai society. The division between the different colored shirts has significance to the story.

This passage clearly shows the society in Thailand. Although the intentions may not be genuine, Thais will value manners first. It also mentions the plot that the Thais are manufacturing new fruits like the gnaw and bribing the ministry.
