Daniel, I think you're thinking of The Mount by Carol Emshwiller.This was the edition/cover I read: The Mount
The owners of the factory were definitely human, and the story focused on one of the workers. I can see the similarities though :D

The main plot, from what I can remember- It's a post apocalyptic world where only a small group of humans are left. They are using people as "cattle" and treat them as such, eating them and milking them, and using males as "bulls". The company that owns the slaughterhouse sways popular opinion against vegetarians. The main character fights to free the "cattle" from the slaughterhouse, and their inhumane treatment.
It had a golden cover. Probably.
