It's up to 16 books, though. I'm not sure anyone wants to do such a long series. Thoughts?
If not, then the Codex Alera (aka the Furies) by Jim Butcher is only 6 books long & is fairly new. It's an actual fantasy, not paranormal like his Dresden series, but all the books are available in paperback & it has a definite ending, which is kind of nice.

I would like to nominate the Fortress series by C.J. Cherryh. C.J. Cherryh. I have not read any of them, but it comes highly recommended (and the first book is actually the fantasy selection over at the Beyond Reality group this month).
I'd like to nominate the Second sons Trilogy by Jennifer Fallon beginning with Lion of Senet. I like the interactions of the characters and how this little group history engage the whole world'history.

I agree with Janny, but am uncertain if the series is complete. CJ talks about this in another thread. For something different religion + fantasy, I'd like to nominate Salvatore's The Cleric Quintet. I read these as released, an remembering enjoying them—one of the better Forgotten Realms, IIRC.

No rule that a series has to be complete - and Cherryh's sequals, guaranteed, stay taut and do not sprawl. She never leaves cliff hangers, so the story line is not left dangling.

I know I mentioned Butcher's series was complete, but I thought it might be a draw, not a restraint. The other series I mentioned has over 20 books with new ones appearing every year or two. I thought that might turn people off.
I agree that there are some good nominations. I'll go ahead and nominate Robin Hobb's Farseer Trilogy starting with Assassin's Apprentice. There are just the three books in this series. This is one of those other series I want to read, but just haven't got to yet. If if wins, we could decide if we wanted to do the other related series, the Tawny Man and Liveship Traders.
I'd go w/ Cherryhs fortress series, the first "series" one is the best of the whole. I'd happily do another read on that one:) fionvar, a close second:)

My vote is The Fionavar Tapestry. This was the first fantasy series that I read and I was hooked on the genre after completing the three books.
