Could it be one of the Fighting Fantasy series by Steve Jackson and Ian Livingstone and a few others? The first book is The Warlock of Firetop Mountain. I remember reading them around the same time. (Published 1982 to 1995) https://www.goodreads.com/series/4234...
If it's not Fighting Fantasy (the most popular such series of the era) you're going to have to get a lot more specific. There are a LOT of similar series.
Thank you guys for the suggestions. Steve Jackson and Ian Livingstone were definitely some of the authors I read back then. Pretty sure I had a few of the Lone Wolf series too.Thanks to all the help, at least now I know that the category keyword I'm searching for is "gamebooks."

Book starts with you creating a character and rolling a dice to set stats for Strength, Dexterity, Charisma, etc.
Book is combined with dice + pen and paper.
Book is an interactive story featuring encounters that the reader uses dice and their character sheet to fight monsters and pass challenges.
