Short Story (Read in German): About a worker in a slaughterhouse searching for the perfect tone

I read the short story in German around 2000-2002 or 2005-2006.

It describes a worker in an slaughterhouse who equates the noises and sounds caused by the work of the conveyor belt with a synphony. He is seaching for the perfect sound. Therefore, he also shoots a bolt gun (german; Bolzenschussapparat) into the cow's head and presses his ear against the hole to hear the sound. After a long search, he finds the note by shooting himself.

A bit gore - sorry. I remembered the story a few years ago. We read it in the 5th/6th or 10th grade . It may have been translated from German or into German. I remember being captivated by the style of writing and the flowery descriptions.
