Fabelhaven complete series by Brandon Hull (2512 pages) although as a boxset I'm not sure if it counts as 'a book'! Also The Terror by Dan Simmons (794 pages) and The Stand by Stephen King (1152 pages)
Gone With the Wind, 1037 pages. Yes, I read it and I loved it...though yes, it can be problematic in today's age.
The longest book I've ever read was Stephen King's IT! Definitely a trip, especially when I read it in the 6th grade... I'm coming up on reading Sarah J Maas' Kingdom of Ash, which is pretty close to a thousand pages!
The longest book I have read is Oathbringer (Stormlight Archive #3) by Brandon Sanderson, 1310 pages, 122 chapters, and in smaller texts than its previous instalments. It took me two months to finish it.
Keep in mind:page count doesn’t tell the exact story: The Ink Black Heart has the most pages but the lowest amount of words. Just one point in corps-size can make a lot of difference…

Does an epic poem count? If so, Beowulf - the longest, most tedious read I can remember and it was 30 yrs ago in high school!

I just checked and Shogun is 442,603 words, almost as long as IT.
The top 4 longest that I've read are:War and Peace by Leo Tolstoy (1392), World Without End by Ken Follett (1237), The Lord of the Rings by J.R.R Tolkien (1216), and The Witching Hour by Anne Rice (1207)
In Search of Lost Time by Proust (the english version of A la recherche du temps perdu) as a challenge during the Covid lockdown. 4215 pages.
This year it was Heat of the Everflame by Penn Cole which is 1026 pages, last years was House of Sky and Breath by Sarah J. Maas which is 805!
