SOLVED. YA Fantasy book (possibly a Short Story collection) where a girl made of sugar becomes the witch in Hansel and Gretel. [s]

I can't find this book and it's driving me crazy. I read it some time between 2012 and 2016, and it was about a man who makes himself a daughter out of sugar/candy. Eventually, he sells her (I think to a prince or king?) and she is basically tortured by being slowly taken apart and eaten. Then, she escapes, although she's left disfigured. She creates a gingerbread house at the end. Please help me figure out what this is!
