SOLVED. Children’s short paperback with a cat named Poughkeepsie. [s]

I don’t remember a lot about this book other than I believe the main character was a young boy and his family had two cats, one named Poughkeepsie (I remember this distinctly because my parents had to teach me how to pronounce it). I read it in the 90s or early 2000s and I don’t think it was new then. I vaguely remember some greenish/blue illustrations/cover and there was some plot point about applesauce.
