Did you read this short story in an anthology/ collection? What's the genre (e.g., adult sci-fi or fantasy)?
I don't remember if the story was in an anthology or if all the stories were by the same author. The genre was sci-fi.

In the story, humanity was basically wiped out by a plague that rendered people infertile. The main character was a man whose village was basically trying a breeding program. He mated with the woman who seemed most fertile and she got pregnant, but it wasn't a normal pregnancy. She kept getting bigger and bigger until she ultimately died giving birth to a part-human part-elephant hybrid. At the end of the story, the half-human and half-elephant person met another half-human and half-elephant person and the main character reflected on elephants and these hybrids being the next stage of evolution.
The story was NOT "Melancholy Elephants" by Spider Robinson.
