SOLVED. Childrens Fantasy book - Family adventure set in a Scottish (or so) castle. Talking baby, Cryo-preserved grandma, kind Nessie-like monster. [s]

I‘ve read this probably in the late 90s/ early 2000s. It‘s a fun childrens tale about a family living in an old (and somewhat ruinous) castle. I remember they have a grandma who is cryopreserved in the freezer and who the family thaws for birthdays etc. (she is waiting for science to find a cure for aging). Also the baby of the family can talk and is pretty smart. There is a Loch Ness Type monster in the story which is good-natured if I remeber correctly, as well as a ghost of some sort. Thats about everything I can remember. At some point I think the story was about them fixing the roof of the castle.
Not much to go on, I know, but maybe someone has a clue. Would be really cool! :)
