A book about an alchemist turned into a bird. He has a potion/elixir, something like that. When drinking it people turn into birds accordingly to their own characteristics as humans. Also, I don't really remember but maybe he was being captured too?

I read this book in french, so I'm not sure if it's written originally in french or translated from english or any other languages. It should be released from 2000 to 2016? It was a book I read a few years ago (2016-2019) and really liked it, so I hope someone could tell me. Thank you in advance!
