Read in Australia in English. I'm guessing it was late 90s/early 2000s. Not part of a series. No idea on the time period or the cover, sorry.

I haven't read it, but I went to Archive.org and typed in "spinach" "white socks" and "ayah" (which I knew was the Indian word for nanny) and it came up as the first result.https://archive.org/search.php?query=...

Other things I can remember:
- at some point the nanny goes away to visit a sick family member in another village
- the boy in the jungle lives with his grandmother, I think
-at some point there’s something about white socks, and teeth falling out if you brush them too much and spinach. 🤷🏻♀️ I think these might all be things the nanny says but the girl possibly has a dream where they all smoosh together.
