I just found the book ! Turns out the author is a French man, Victor Dixen, and the story takes place in the 19th century. The book is called "Animale : La malédiction de Boucle d'Or".
There will be many spoilers bc the plot twists are what stuck with me.
The protagonist and narrator (?) is a blonde girl who can turn into a bear but not whenever she wants, it's like a curse and she tries to fight progressively turning into a bear. I think the story was taking place in the Middle Ages, maybe in France or in a Nordic country bc at one point she talks about a festival of the dead taking place around October and references nordic mythology. She's in a convent at the beginning of the book but she's unhappy and escapes (i don't remember if she had family or if she was an orphan). It's risky for her but she gets on a boat : it's a mean of transportation in her city and she had to pay the fare. But she didn't have any money. She's about to get caught but miraculously escapes and wanders off to a forest I think.
((She's also being chased by someone or an organization bc she can turn into a bear and they want to use her or kill her, I'm not sure.))
She then meets a guy her age who will help her. I don't remember what happens next but I know they're in love and they go live on a deserted island to escape the ones chasing her. They grow up and become adults. One peaceful day, while her lover is repairing their house's roof, the girl sees a man approaching them and she recognizes him bc he is the one chasing her. He kidnaps her and takes her back to the city.
Major spoiler here : she then completely turns into a bear and progressively, her narration becomes less and less intelligible as she looses her humanity. But finally, her lover saves her, I don't remember how, and I guess they escape and that's the end.
