I’m trying to remember the name of a book about a couple who run a company that allows people to communicate with an AI that simulates a dead loved one based on their online history.

Plot: Heterosexual couple meet. Her grandmother dies and she’s very sad. He creates a program to simulate her grandmother. They turn this idea into a business. She dies. He makes a simulation of her.

A detail that sticks out in my memory is that she makes model airplanes. After she dies, the simulation of her is able to teach him how to make a model airplane.
