Fantasy/YA - main female is ambushed and falls in love with one of the attackers

so I remember this book pretty clearly but google isnt helping. um so ... I read it probably in 2018 or so. Basically the main female ( i think she was royal somehow) lives by the country/beach with some maids and then she has to go back to the castle (I think) and along the way she gets ambushed and then the attacker guy has to search her and says "I would rather search a bear" and she replys with something like "if i knew I would have brought one" and then he says "but you didnt know" (or something along those lines). they fall in love later i think and they also visit a hotel/inn place. That one section of dialogue just lives in my head rent free and i cannot remember the name or who wrote it, but I really want to know where it is from. thanks.
