SOLVED. Children's Chapter book: young girl stumbles into shop and learns/is taught to become a witch 2006-2010

Pretty sure this book is english and has 3-4 books. Is a middle grade chapter book. There's key scenes about learning to fly that includes the cosmos (I think), getting a familiar, searching for magical ingredients. I think I've found it once before and it's no longer being published, was published in 1980's-late 1990's. Witch who is teaching her isn't insanely old and possibly has red hair and runs a store front. Girl may be an orphan but I think she isn't. She's 11-13 I would say.
