Benjamin, is this a children's picture book (about 32-48 pages)? Does the text rhyme?
Can you describe the illustrations - e.g., simple or detailed, realistic or cartoon-like, painted watercolors or bold graphics, bright or dark colors, black & white? Do they remind you of a similar illustrator or picture book author?

Yes it's a children's picture book and I would put it at around 35 pages.
The illustrations are very colorful and cartoony/zany. The illustrations have depth and are not simplistic line drawings.
Another illustration which I remember fuzzily: lots of bright pink bubble gum.

Yo! Banana Boy!: Palindromes, Anagrams, and Oxymorons?

The art style is closer to maybe the The Stinky Cheese Man and Other Fairly Stupid Tales
And if I absolutely had to say what the title might be it would be something along the lines of "The most Impossible/Spectacular Thing in the World."
But I don't want to lead someone down a rabbit hole with that guess because I have searched google endlessly and tirelessly and turned up nothing.

The words literally started pouring out of my head... the heaviest thing in the whole wide world is, the lightest thing in the world is, the HOTTEST THING IN THE WORLD IS A DRAGON EATING PIZZA!
The hardest thing to find in the world is... this book!
Things That Are Most in the World

I believe the book is about exaggerations or oxymorons or things that don't make sense.
It is possible the book makes use of a lot of alliteration.
My main memory of it is a single picture: there is a dragon that is eating something very spicy (probably peppers but possibly a pizza or hot sauce) and the dragon's eyes are wide and watering because whatever it is eating is just too hot for it to stand!
So each page in the book presents things of that nature, a dragon who eats something that's too spicy... I would list more examples but that's the only one that stuck after all these years.
Thank you for your help!
