Paranormal Romance / Vampire « king » that can shift into a dragon hunted by an order of knights meet a psychic woman in new york whose mind he can’t read well

The human was originally the neighbour of a vampire couple, whose guy was kind of a cousin of the vampire king ? And the wife wanted the human to meet this king so she invite her over for a diner.
Also the human witness something strange near a church with a lot of bats and then her mind can’t be erased.
The king become interested in her because he is unable to read her mind which is kind of hyper if I remember correctly ? Like for him it makes no sense but he catches the word « vampire » therefore he start investigating her.
At one point he brings her over to a museum (open just for them).
When he drank her blood he had visions.
There is a « knight » of a secret order (maybe related to st george ?) that follow him to kill him who also meet the human psychic.
Big fight at the end, maybe because some vampires tried for a coup and failed ? I am not sure. But there is a big fight scene in a church where the vampire king transform into a dragon (maybe because the human psychic was threatened ?).
The human psychic also helps the order of knights and at the end of the book I think she choose to stay with them for a while and say good bye to the vampire king, but it’s implied that they will meet again in the second book.

I read that book maybe 4/5 years ago ? And it was not a new release. So maybe it was published ten years ago, something like that ?
