SOLVED. Children's Fantasy book about this knight who goes to rescue a princess from a mother dragon. Read around 2012-2016. [s]

A short medieval fantasy children's chapter book.

The kingdom's princess has been taken by a mother dragon and is living with the dragon in her cave and taking care of her brood of baby dragons. A young knight comes to rescue her.

I specifically remember a scene near the end where the knight lays on his back to expose his stomach (a dragon's vulnerable spot) to show his respect for the mother dragon and she places a single claw on his stomach to acknowledge him. He then goes back to the kingdom with the princess.

I read it maybe between 2012 and 2016.

Just bumping this. I'm pretty sure the book also had black and white illustrations, but they may have been in color.

Also, there was a scene at the end that involved an apple or a pear (kind of random, I know).
