Fantasy book that starts with the gods creating the different races

I probably read this book in the late 00's or early 10's, I read it in Danish but chances are it was a translation. The book starts with different gods creating the different races, one of them tries to create a tall race but it breaks and turns into multiple small races one of them the dwarves. The main character is a large farm boy wielding a big weapon, an axe, I think. multiple times throughout the story one of the characters comments something like "You know what they say about guys with big weapons."

I remember that at one point, the main character gains a ring or something that makes him immortal, but if it is taken of and he dies he will be trapped in his body. This results in some orcs killing over and over again for fun and I remember a cover where his heads were on pikes. in the end he actually loses the ring and dies, which I suppose is the ending cliffhanger
