A couple I’m not sure of, so you should probably wait for a second opinion:
The Fifth Season? Or does it only count if (view spoiler) ?
The Eye of the World? Not sure if that counts because that whole relationship situation was kind of a mess and I’m having trouble remembering just which relationships were formed in that first book as opposed to just being foreshadowed. There's surely enough characters in there to draw lines between them and make up a love triangle, though...
There are a handful of other books on our shelf that might qualify, but they’re either subtle or short-lived so probably not in the spirit of the challenge. Magician, Elysium, I think some others along those lines that I didn't write down at the time I thought of them because I didn't think they qualified.
There are probably others that I’m forgetting or haven’t read yet.

Guy Gavriel Kay’s Fionavar Tapestry trilogy has one, but I don’t think it showed up until the second book.

The Night Circus by Erin Morgenstern
Limited Wish by Mark Lawrence (is a sequel)
The Priory of the Orange Tree by Samantha Shannon (though if I’m being honest, this isn’t something I’d recommend reading, but I’m also pretty grumpy lately)

The Mercy Thompson books have this, as do the Sookie Stackhouse (True Blood) novels. I know the Mercy ones start off with that, the first being Moon Called.
I haven’t read the books, but the movie versions of the Hunger Games and Shadowhunters (Cassandra Clare) feature love triangles. And what’s that time travel show on Starz where the 1940s nurse goes back to 1700s Scotland and US?
Oh, and Twilight.
Of all those I’d go with Moon Called. Lots of decent action and light on the sex.
One non-SFF I liked was Bridget Jones's Diary.
