Hi, I think your book is described here: https://storytellerwebsite.wordpress....Looks like your fish story and Larkspur the fairy are all in there!
Here is the link to the Goodreads reference to the book, which has the same ISBN 10 number: 0671085034, though might be through a different publisher. My Big Book of Fairy Tales: A Treasury of Favorite Stories for Children

One of the stories was about an orphan boy who holds a beautiful, special stone in the water to catch fish. The fish are drawn to the stone and mesmerized by it, so he's able to just pluck them out of the water and sell them to the villagers. He eventually ends up in the ocean finds out he can breath underwater, and his special stone is actually the missing eye of a giant, fish mosaic in the ocean. He puts the eye in, and it opens a door where he finds his parents.
Another story was about a man who wanted to marry a princess, but she would only marry him if he brought her the most beautiful jewels in the world. Adventures ensue, and the most beautiful jewels end up being three of her tears that fell and froze on a chain around her neck.
I think I remember another story from it, but I might be mixing it up with a stand alone book. A Chinese girl encounters dangerous animals in a jungle, and hides underneath her paper parasol, only to find that the dangerous animal had run away. I remember specifically that she knelt and hid behind her parasol when a tiger was in the jungle, but there were other predators too. In the end, she found out her parasol had a ferocious dragon on it that was scaring the animals away.
I think there was another story in it about a fairy named Larkspur who didn't have her wings yet and she was sad and mad about it. The fairies possibly had butterfly wings?
The book also had all of the regulars like the Tinderbox, Beauty and the Beast, and the Tin Soldier, etc. It was probably published in the late 70's to mid 80's. I had it as early as 1987 or 1988.
