I’ve been taking Spanish classes for the past three and a half years. One of the topics my class covered recently would make a good subject for a picture book, I think. However, I’m in no way fluent yet—close, but not quite there. How should I go about writing this? Should I wait until I know more of the language?

In my opinion, you should either wait until you know more of the language, or write an English version and hire a professional translator.
Even though the original poster is long gone; one can write a book mostly in English, with Spanish vocabulary thrown in here and there, as some authors do, particularly: Susan Middleton Elya and Yuyi Morales.
That's a good point, Beverly. Although, you do have to be careful doing that when you're not fluent in a language.
