Red Rising
T'was love at first line, tbh.

She slices through the water, imagining herself a deadly beam of black light.

Opening line of The Alchemists of Loom
I don't know what Arianna is up to yet, but it seems like it's going to be pretty epic. Or at least involve a lot of destruction. I also enjoy the implication that she has three bullets, but may or may not have a gun...

Yeah, promising start!
It's gotten a bit typical "old school boarding school" since the promising start, but it's early days so I'm still hopeful.

Opening line:
"When a day you happen to know is Wednesday starts off by sounding like Sunday, there is something seriously wrong somewhere."

"This is the story of a man who went far away for a long time, just to play a game. The man is a game-player called Gurgeh. The story starts with a battle that is not a battle, and ends with a game that is not a game."
For me, some of the best openings say something profound that you may not even recognize as such until the end of the story, after the opening statement has been given so many different meanings that your head is spinning.
