You could try The Assassin's Blade by Sarah J Maas. Its a prequel to her book series that follows a female assassin, from memory I think some of it has stuff about her training with her master though its a twisted relationship, and at least part has her travelling to another master assassin to train.
Or for something a bit different theres Urban Shaman by C E Murphy, main character discovers she a shaman and her 'master' is a coyote. Has native american and irish legends/myths

I really like the master and student dynamic in books. Raymond E Feist's Magician Apprentice is the first that comes to mind, how he is trained to become a Magician and goes through a real meditative phase.
The Desert Spear by Peter V Brett is another I really enjoyed.
I like fantasy, thief, assassin and magic books but am open to all genres on this topic.
Raistlin from the Dragonlance Time of the Twins/Test of the Twins novels.
Opening the Dragon Gate: The Making of a Modern Taoist Wizard.
