The Kingkiller Chronicles by Patrick Rothfuss is also very, very good. It still isn't finished but the first 2 books are out. It is expected to be 3.
An old goodie is The Song of the Lioness Quartet by Tamora Pierce. Definitely one of my favorites growing up.
Howl's Moving Castle series by Diana Wynne Jones. Yes, the Studio Ghibli film is based off the first book, but they are both slightly different. I love them both dearly.
The Parasol Protectorate series by Gail Carriger. This is a steampunk urban fantasy romance series. She has a YA series set in the same world and time period (Victorian) but I haven't read that yet. The Parasol Protectorate is a lighter adult fantasy read and it's tons of fun.

Cassandra Clare novels for Teens - some people say her books aren't that good but I think they're amazing. Especially Lady Midnight. You can see the growth in Cassie's writing.
The Lunar Chronicles by Marissa Meyer for those who want fantastic retellings.
Sarah J. Maas novels - they literally are books that still keep you guessing.
And of course, Harry Potter by J. K. Rowling for everyone.

Also, since I'm being nostalgic: the Death Gate cycle series (starting with Dragon Wing ) is the first Fantasy series I ever read and I loved them. But if you've already read many high fantasy series, then this might not be for you.
I also highly recommend The Cemetery of the forgotten books Series by Zafon, staring with The Shadow of the Wind.
