The Demon King (Seven Realms, #1) by Cinda Williams Chima - The entire series is very well-written and interesting. It is YA but also great for adults.
The Spirit Thief (The Legend of Eli Monpress, #1) by Rachel Aaron - I loved this series. It is especially good if you like humor and thief/troublemaker characters
Prince of Fools (The Red Queen's War, #1) by Mark Lawrence - Amazing book. If you can get your hands on the audio narrated by Tim Gerard Reynolds DO IT! It is one of the best narrations that I've ever had the pleasure to listen to.
Thud! (Discworld, #34; City Watch #7) by Terry Pratchett -Pretty much anything by Sir Terry Pratchett will be amazing, but this is my favorite of his.
Kushiel's Dart (Phèdre's Trilogy, #1) by Jacqueline Carey - This is more along the lines of romantic fantasy. It is a great story with very interesting characters- but there is a lot of sex.

I would highly recommend A Court of Thorns and Roses (A Court of Thorns and Roses, #1) by Sarah J. Maas , I couldn't put it down once I started!

If you enjoy a bit of humor in your fantasy, I would recommend the discworld series, the first book is The Color of Magic (Discworld, #1; Rincewind #1) by Terry Pratchett .

Finally, if you like epic fantasy (a bit longer but I find them pretty engrossing), Patrick Rothfuss is amazing! Check out The Name of the Wind (The Kingkiller Chronicle, #1) by Patrick Rothfuss .

Syndiciate I second Name of the Wind. Though, out of curiosity, when you say "hard to get into" do you mean one's that require a certain amount of investment before the become truly interesting or one's that are overly long ( I.E. 500+ pages ). If you meant the latter, "Name of the Wind" might not be a good choice for you.
