"More photos" shows up for ALL editions of a book. But covers are explicitly not supposed to be added there, so removing that is fine.
What is an appropriate use of "more photos"?

Or of a complete wraparound cover?

Amazon now have their 'flip' thing which allows the front & back cover (as well as the inside) to be shown. If their copy of a book shows the back can we do the same?

It's probably not a copyright/fair use issue in that case. But unless the back cover has a map or something, I don't see what the point would be of adding it as a "more photo" for the book.

That full cover is pretty amazing. With picture books, where the illustrator is as important as the author, it would be nice to see their full cover.
