Swiss – but which? I have difficulty with the American notion of "Swiss" cheese since the Swiss produce Gruyère, Emmentaler, Fontina, Münster, Tilsiter, Sbrinz, Appenzeller, Raclette (several versions), Quark, Vacherin, Tomme vaudoise, Bergkäse… to name but a few. When it's in season (early summer to October) a 50/50 mix of soft Vacherian and Gruyére dissolved in a sharp white wine, thickened with a small amount of cornstarch in Swiss kirsch, seasoned with a little garlic, ground pepper, and ground nutmeg makes the classic cheese fondue of Switzerland. :-))Hard cheese: Parmigiano Reggiano or Sbrinz?
