The one that first comes to mind is Tigana by Guy Gavriel Kay. They read it in Veronica's other book club, Sword and Laser.
This one was read as an alt pick for the group.http://www.goodreads.com/book/show/68...
This one has been recommended by TONS of people. I haven't read it yet, but I've heard great things.

This book IS part of a series, but ABSOLUTELY works as a stand alone.

I don't know if this is what your looking for but I really liked it!http://www.goodreads.com/book/show/23...
I'm not sure just how epic it is but one of my all time favorite books is The Last Unicorn by Peter S. Beagle! While the movie is cute and the soundtrack has a small place in my heart cause of how young I was when I saw it, the book is far more detailed and the characters are pretty well developed.
I don't know about epic fantasy, more historical fantasy but the Devil's Diadem by Sara Douglass was amazing and sure to bring up a lot of discussion.
Right away this comes to mind:Knights of Dark Renown (1989) by David Gemmell
You will be hard pressed to find any work of low-magic, sword and sorcery fantasy that packs more bang for your buck than this one. The characters are heroes, both tragic and true. The villains are feared, hated and completely understandable (a rare quality.)
If a Martin or a Goodkind wrote this book, it would have been 6 volumes, 800 pages each. Gemmell does it in 311.
Alan Dean Foster wrote a book called To The Vanashing Point I think it's pretty epic I mean you have a family on vacation in a Winnabego and they go to hell, an alternate dimension, outerspace all because they picked up a hitchhiker. It's a great bit of fantasy and science fiction.

I have a challenge for you. I need epic fantasy books will offer up lots of discussion and here is the important part. They MUST NOT be part of a series.
Hope you guys can help me out!
Cheers,
Rune
