He is a voyeur not in the classic sense of a peeping Tom, but rather in the more modern sense a person who likes seeing and talking or writing about something that is considered to be private. Nick isn't actively engaging with anyone, he simply likes to watch what's going on without getting any deeper into a relationship. Not with Jordan, not with Daisy, not with Jay nor Tom.
