Hi Makayla,
I am an edit as I go type of writer. I do plot out all my books, but I have rarely written a book to plot. The characters change, the plots change and therefore what I have written changes. It's hard for me to press forward without changing what I had written before.
Once I do finish a draft, I give it beta readers and I don't look at it again for several weeks. After the break, I make whatever changes I need due to feedback and then I go back through and do a thorough reading of the book.

Hi Katie! I was thinking about the Thunder Road series and remembered reading briefly about a character with cerebral palsy (I think his name was Brian if I remember correctly) and I was wondering if you considered writing his story? I have cerebral palsy myself and I don't get to read a lot of books where the main character has a disability and I think it would be pretty awesome if he got to have his story.
