You should definitely read the books WITHIN the Virgin River series in order. There's a lot of overlap with characters from the beginning books appearing in later books, so you won't know who everyone is if you don't read in order.

And as I understand it, the Thunder Point series is an offshoot of this one. The hero of book 1 is a character that makes a brief appearance in one of the Virgin River books. I haven't read it yet though.(less)
