I think either Anne Rice got confused or more likely the editor judged that most readers wouldn't know what a "succubus" was, so they decided to go with the better-known, although imprecise, term "incubus".
I guess it's safe to assume Lisa definitely wasn't using "incubus" as a synonym for "nightmare", as you can see from Reuben's reaction to the word.
