Could the earth technically be a flat plain but is bent through 5th dimensional space making us see it as a sphere? Similar to how interstellar suggests a wormhole would appear spherical in the three dimensions we can interpret?

A hypersphere (4D and higher) passing through three dimensions will look like a sphere to three dimensional beings, such as us.

The curvature of spacetime is tracked, almost by definition, by the path a beam of light takes. If the curved surface of Earth were caused by the curvature of spacetime, then light beams would curve along with it, and they don't.
