Hi Nikki,
I'm a plotter by nature, but none of my books have ever gone as planned. I always have next to me what I want to have happen in the book along with a sketch of all my characters. It lists what their goals, conflicts, and motivations are to keep me on track.
My favorite book on plotting is John Truby's Anatomy of Story.
